Here are this month's muffins.........
It's that time of year again so get ready for a bunch of rhubarb recipes here on the Farm.  I have made lots of rhubarb muffins in the past few years but these are the first where I roasted the rhubarb.  You may also enjoy my Banana Rhubarb Muffins, Cinnamon Rhubarb Muffins, Sour Cream Rhubarb Muffins, Strawberry Rhubarb Muffins and plain ol' Rhubarb Muffins.

Roasting the rhubarb first added a whole new dimension of flavor to the muffins and the addition of white chocolate chips added contrast to the tartness of the rhubarb.

I shared a strawberry rhubarb dump cake with you on Saturday and I have a few more rhubarb recipes coming up in July including ice cream and a cocktail so stay tuned.

Roasted Rhubarb Muffins

Roasted Rhubarb Muffins

Delicious muffins studded with roasted rhubarb and white chocolate chips.

Ingredients

  • 1 c. diced rhubarb
  • 1 T. sugar
  • 2 1/4 c. flour
  • 1/4 c. brown sugar
  • 1/4 c. sugar
  • pinch of salt
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/2 c. white chocolate chips
  • 1 c. milk
  • 6 T. butter, melted and cooled
  • 1 egg
  • 1 t. vanilla

Instructions

  1. Toss the rhubarb with the Tablespoon of sugar and place on a baking sheet that has been lined with parchment or a silicone mat. Roast in a preheated 350* oven for about 10 minutes. Remove from the oven and let cool to room temperature
  2. Whisk together the flour, both sugars, baking powder, baking soda and salt. Add the rhubarb in batches tossing to coat.
  3. Whisk together the milk, egg, butter and vanilla. Add to the dry ingredients and mix just until combined. Fold in the white chocolate chips.
  4. Divide the batter between a 12 cup muffin pan that has been treated with baking spray and bake in a preheated 350* oven for about 15 minutes until a skewer inserted removes cleanly.

    1. I transplanted mine last year and it did not do as well this year. I may need to move it again but will give it another season.

    1. Rhubarb is an edible stalk that is very tart. It adds a great tang to baked goods and sauces, especially when mixed with other fruits for a sweet/tart treat.
