Happy Birthday Kirsie--I am serving up your Eclair Cake for #DairyWeek in memory of you.

Cream puff crust and custard filling topped with whipped cream and drizzled with chocolate.  This delicious dessert is sure to become a family favorite.

It is the second installment of this year's Dairy Week event......
Today is my dearest friend, Kirsten's, birthday.  She is spending it in heaven, I am spending it here on earth missing her terribly.  Her husband, John, is having a party for her birthday.  A Fish Fry.  I am bringing dessert...Kirsie's Eclair Cake.

Kirsie and I became friends after I moved into this area in 2001.  We met at church, we were in the choir together.  From the moment we met we had an immediate connection.  We became fast friends, and then we became family.  She was the first person I called when I had happy news.  She was the first person I called when I was troubled.  She was the first person I turned to when I needed help.  She had a constant smile and gave the best hugs in the world.  I loved her and I miss her terribly.

In the 20 years of friendship, we had a lot of gatherings and Kirsten always provided this Eclair Cake for dessert.  It was Frank's favorite and sometimes she would just make it for him for no reason other than she loved him.

I never asked for the recipe, there was no need.....I would just know that she would bring it to whatever function we had.  Kirsten passed away from COVID on April 26th of 2021.  This is her second heavenly birthday.

We had an end of year choir gathering, as we break for the summer, last weekend.  I asked John for Kirsten's recipe and made this in her memory and honor.  It turned out well and Kirs would have been very pleased.

John asked if I would bring it to Kirsten's Birthday Party today.  I am honored to do so and I am happy to share this wonderful recipe with all of you as we celebrate National Dairy Month.

    Kirsten's Eclair Cake

    Kirsten's Eclair Cake

    Cream puff crust and custard filling topped with whipped cream and drizzled with chocolate. This delicious dessert is sure to become a family favorite.

    Ingredients

    Eclair Crust
    • 1 c. water
    • 1 stick butter
    • 1 c. flour
    • 4 eggs
    Filling
    • 2 (8 oz) pkgs. cream cheese
    • 4 c. milk
    • 2 (4 oz) pkgs. instant vanilla pudding
    • 1 container Cool Whip, thawed
    • Chocolate syrup for drizzling

    Instructions

    Eclair Crust
    1. Melt butter over medium heat. Stir in the water and flour until a ball is formed. Place into the large bowl of a stand mixer, fitted with a paddle attachment, and add the eggs, one at a time, until blended.
    2. Spread onto an 11x15" baking pan and bake in a preheated 400* oven for 30 minutes, until puffed and golden brown.
    3. Place pan on wire rack and let cool completely.
    1. Place the cream cheese in the large bowl of a stand mixer, fitted with the whisk attachment. Beat until creamy.
    2. Reduce speed and slowly add the milk until incorporated.
    3. With speed still on low, add the pudding and stir until it starts to thicken.
    4. Increase speed and mix until thick and smooth.
    5. Pour on top of cooled crust and spread to cover evenly.
    6. Spread the Cool Whip over the pudding and drizzle with chocolate syrup.
    7. Cover loosely with plastic wrap and refrigerate until ready to serve.

    6. Eclair cakes are amazing! There is a lady at our church that makes one every time we have a potluck and it is always the first thing to be eaten. Thanks for sharing the easy recipe!
