Of course, you don't have to make this just for one. You can easily multiply the ingredients and make this for as many as you want. I made this dish for me one day when my husband, who is not a salmon lover, was having leftover Chicken Pot Pie.
There was only enough Pot Pie left for one serving so when I spied a piece of Smoked Salmon in the refrigerator left from a Charcuterie board I decided to make myself this scrumptious lunch. I used Brown Rice Fusilli because that was what I had in my pantry but you can use any short pasta you like.
I am also sharing my Weekly Menu with you today. We are lucky enough to have the Angel Face again this weekend and are striving to finally make it to the Corn Maze. We have been rained out each and every time!!!
Sunday we are going out to dinner with 2 of the 6 and their spouses. Monday we are attending a Duckhorn Wine Tasting Dinner with Bob and Cathy. Thursday we are going to dinner with friends who are in town from Texas. So it's not much of a Weekly Menu but that's Life on the Farm.

Smoked Salmon Pasta
Brown rice Fussili tossed with Smoked Salmon in a Caper Dill Cream Sauce. Tastes like a gourmet meal and is ready in less than 20 minutes.

Ingredients
- 2 oz. dried pasta, cooked per package directions
- 1/4 c. thinly sliced leeks, white part
- 1 t. olive oil
- 1/4 c. heavy cream
- 1 t. capers
- 1 oz. flaked smoked salmon
- pinch of dried dill
- freshly ground black pepper
Instructions
- While pasta is cooking, heat the oil in a small skillet over medium heat. Add the leeks and cook until softened. Stir in the cream and capers and cook until reduced and slightly thickened. Stir in the dill and salmon and keep warm on low heat until pasta is cooked.
- When pasta is al dente, use a slotted spoon or spider to transfer from the cooking water into the skillet with the cream sauce. The residual water on the noodles will loosen the sauce a bit. Toss and serve.
