A New Year, A New Start, A New Weekly Menu

Happy New Year's Eve.  I'm sure that you are as glad as I to do away with the old and welcome the new.  2020 was a tough year for all of us.

And even in the midst of the turmoil that was 2020 I still was so very, very blessed in so many ways.  I thank God for those blessings and I praise Him for the promise of this New Year.

2020 ended with a bang and another blessing.  Frank suffered a stroke this past Monday due to extremely high blood pressure.  He spent several days in the hospital, with no visitors allowed, as they worked at slowly bringing his blood pressure down to a safe number.

He is now home and his medications are tweaked so as to keep this from happening again.  I, too, am going to do all I can to keep this from happening again so you will be seeing some changes in my weekly menus.  You will be seeing many more plant based meals, more lean protein like chicken breast and fish, more whole grains and much less white pasta, white rice, beef and pork.

Soup Saturday
Chicken Chili with Sweet Potatoes
Tortilla Chips

Sunday Supper
Garlic Roasted Salmon and Brussels Sprouts
Whole Wheat Couscous

Meatless Monday
Spaghetti Squash with Roasted Tomatoes, Beans and Almond Pesto

Tex Mex Tuesday
Stuffed Delicata Squash
Salad

Wednesday
Roasted Beet Salad with Grilled Chicken Breast

Thursday
Chicken Hummus Bowls
Whole Wheat Pita

Fish Friday
Avocado and Shrimp Chopped Salad

May 2021 bring us all much happiness, peace and health.  God bless and keep you until we meet again.
