Green Tomato Pasta Sauce and The Weekly Menu

 I don't know about you but when we were getting our first frost I still had a shitload of green tomatoes in my garden.  I brought them in, put them on my counter and then tried to figure out what I wanted to do with them.

I made some Fried Green Tomatoes but that still left me with a lot of tomatoes.  I sat down and started perusing different recipes and came across one for Green Tomato Pasta Sauce on Food.com.

It's a very easy recipe.  Slice your tomatoes and place them on a baking sheet.  Season liberally with salt and pepper and drizzle them with olive oil.  Pop them into the oven and let them cook, uncovered, for half an hour.

After the tomatoes soften a bit, add some garlic and basil to the mix and cover with foil.  Return it to the oven for another half an hour.

It all goes into the food processor for a quick puree and it's ready to serve.  It was delicious, reminding me a little bit of pesto with all the garlic and basil.  It made a great Meatless Monday dinner. I sent some of the leftovers across the street for the Teen's aunt and uncle.  They served it up as a side dish to the Salmon they were having for dinner.  Aunt Michelle said it was perfect together.

Green Tomato Pasta Sauce

Green Tomato Pasta Sauce

This is a savory sauce with just a touch of tang, remeniscent of pesto. A perfect way to use up the last of the tomatoes in your garden.
Prep time: 10 MinCook time: 1 HourTotal time: 1 H & 10 M

Ingredients

  • 1/4 c. olive oil
  • 12 medium green tomatoes, cut into 1/4" slices
  • salt and pepper, to taste
  • 1-2 T. minced garlic
  • 1-2 T. basil paste
  • 1 lb. pasta, cooked per package directions
  • parmesan cheese for sprinkling

Instructions

  1. Place the tomato slices on a baking sheet that has been covered with parchment or a silicone mat.  Drizzle with the olive oil and season with salt and pepper.
  2. Bake in a preheated 300* oven for half an hour.
  3. Remove from oven and sprinkle with garlic and basil paste.  Cover with foil and return to the oven for another half an hour.  
  4. Pour all ingredients and any juices released into a food processor. Pulse two or three times to desired consistency.  
  5. Pour over cooked pasta.  Sprinkle generously with Parmesan Cheese,
