Pickled Cabbage #FallFlavorsWeek

Fresh cabbage, tart apples, and sweet onions combine with a tea infused pickling juice that will make people stand up and take notice. This quick pickled side dish is perfect to serve alongside roasted or grilled meats or alongside burgers or pulled pork sandwiches.

I was happy to be able to use wonderful produce from Melissa's for today's recipe.  I also used this wonderful Apple Cider Tea from The Republic of Tea to flavor the pickling brine. 

Pickled Cabbage


I served this salad up as a side dish for Apple Cider Tea Brined Pork Tenderloin that we had for dinner one evening.  The following day we went across to the neighbor's to celebrate the Teen's aunt's birthday.  I arranged the leftover slices of pork tenderloin on a platter surrounding a bowl of this pickled cabbage and sliced up a baguette for people to enjoy as an appetizer.  It was perfect.  

A few days later I served it as a side dish when serving pulled pork sandwiches to the students in Frank's CPL class.  I still have a little left in a jar in the refrigerator that I plan on serving when I make up Mom Klik's Breaded Pork Chops. Stay tuned for that recipe coming up soon.

This fresh pickled cabbage will last for several weeks in the refrigerator and the flavors just get better over time.

Pickled Cabbage

Pickled Cabbage

Fresh cabbage, tart apples, and sweet onions combine with a tea infused pickling juice that will make people stand up and take notice.
Prep time: 15 MinCook time: 20 MinTotal time: 35 Min

Ingredients:

  • 1 small head green cabbage, shredded
  • 1 lg. sweet onion, thinly sliced
  • 3 apples, julienned
  • 4 Apple Cider Tea Bags 
  • 1 c. white vinegar
  • 2 T. kosher salt
  • Cracked black pepper, to taste

Instructions:

  1. Place the vinegar and tea bags into a large pot and bring to a boil. Remove from heat and let steep for 5 minutes.  Remove the tea bag and return pot to heat.
  2. Add the salt and pepper to the vinegar mixture,  return to a boil and stir until salt is dissolved.  Reduce heat and stir in the cabbage, onions and apple.  Cook and stir for 5-10 minutes until vegetables are wilted.  Remove from heat and allow to cool before serving.
  3. Can be served at room temperature or chilled.  Cabbage will keep in the refrigerator in sealed containers for several weeks.
