Cinnamon Sugar Muffins #MuffinMonday

These delicious, light  muffins are made special with a dip in melted butter and a swirl in cinnamon sugar.

Cinnamon Sugar Muffins

These delicious, light muffins are made special with a dip in melted butter and a swirl in cinnamon sugar.

ingredients:

  • 1 1/2 c. flour
  • 3/4  c. sugar, divided
  • 1 1/2 t. baking powder
  • 1/4 t. freshly ground nutmeg
  • pinch of salt
  • 2/3 c. melted butter, divided
  • 1/2  c. milk
  • 1 egg
  • 1/2 t. cinnamon

instructions:

How to cook Cinnamon Sugar Muffins

  1. Combine flour, 1/2 cup sugar, nutmeg, baking powder and salt in a bowl.  Make well in center.
  2. Whisk together 1/3 cup of the melted butter with the milk to cool.  Add the egg and whisk until combined.  Pour into the well of the dry ingredients and mix just until moistened.
  3. Divide between 8 muffin cups that have been treated with baking spray.  Bake in a preheated 350* oven for 20 minutes, until a skewer inserted removes cleanly.
  4. Place the remaining melted butter in a bowl.  Combine the cinnamon and 1/4 cup sugar in another bowl.
  5. When muffins are done, remove from oven and while still warm dip the tops first in the butter and then in the cinnamon sugar.  Place onto wire racks to cool.

    1. Served them up to my family that was in from up north along with hard boiled eggs, yogurt, fresh berries and granola. Huge hit.

  2. What a great and easy way of adding the cinnamon sugar! I would usually brush with butter then sprinkle it on and we all know how that turns out, with most of the cinnamon sugar falling off. Brilliant!
