Broccoli Cheese Casserole #ImprovCookingChallenge

Tender broccoli florets blanched and tossed with melted cheese and buttery crackers then topped with more crackers and butter and baked to a beautiful golden brown.  This recipe makes enough for a crowd and there won't be any leftovers.

Each month Nichole of Cookaholic Wife invites us to create a dish featuring 2 ingredients.  It is a lot of fun and we all compete to see who can come up with the best dish.  This month's ingredients are Cheese and Crackers.  Here is what we all created:

I served this delicious casserole up as one of the side dishes at our Christmas Open House.  There was nary a drop left when dinner was complete.


You start by blanching your broccoli until it is a beautiful bright vibrant green.  Then you toss it into a creamy cheese sauce along with some buttery snack crackers.   


Then you top it with more of the crackers that have been tossed with melted butter.  It can be put right into the oven or you can make it the day before and bake it before serving so that the topping is nicely browned and crunchy.


If you are a broccoli lover you are going to be in heaven and if you're not you soon will be after tasting this recipe.

Broccoli Cheese Casserole

Tender broccoli florets blanched and tossed with melted cheese and buttery crackers then topped with more crackers and butter and baked to a beautiful golden brown.

ingredients:

  • 3 large heads of broccoli, florets removed, stems reserved for another use
  • 12 oz. Velveeta cheese, cut into cubes
  • 3/4 c. half and half
  • salt and pepper, to taste
  • 4 T. butter, melted
  • 3 sleeves, buttery crackers (like Ritz), roughly crumbled

How to cook Broccoli Cheese Casserole

  1. Bring a large pot of salted water to a boil.  Add the broccoli and cook until a vibrant green, 5 minutes or so.  Remove to a strainer and rinse with cold water for a couple of minutes.  Set aside.
  2. In a large pot melt the cheese with the half and half until smooth and creamy.  Season with salt and pepper.  Stir the broccoli and half of the crackers into the cheese sauce. 
  3. Turn into a casserole that has been treated with cooking spray.   Toss the remaining cracker crumbs with the melted butter and sprinkle over the top of the broccoli mixture.
  4. Bake in a preheated 350* oven until top is golden brown and the cheese is hot and bubbly, about 30 minutes.

  1. I think the only thing better with cheese than crackers is broccoli and cheese. That looks so gooey and delicious.
