Fresh Peach Streusel Muffins #MuffinMonday

Tender delicious cake studded with fresh peaches and topped with a savory streusel, these muffins are perfect for breakfast, a snack or dessert.  Try them warmed and topped with ice cream....YUM.

I love when I am able to get fresh peaches.  They aren't quite ready yet here in Michigan but peaches from down south are starting to show up in the stores.


We recently went on a vacation to the west side of our State.  You can read more about that here.  We stayed in a family suite that contained a full kitchen.  I brought food for breakfasts and lunches and we ate dinner at the resort restaurant.


One of the things I made to bring with us were these delicious, tender muffins.  Served up with coffee, juice and some yogurt, these muffins were the perfect start to a day of fun and adventure.


I am sharing the recipe, that I adapted from one found at Allrecipes.com  with my friends over at Muffin Monday.  Let's take a look at what they baked up.

Peach Streusel Muffins

Tender delicious cake studded with fresh peaches and topped with a savory streusel, these muffins are perfect for breakfast, a snack or dessert. Try them warmed and topped with ice cream....YUM.
prep time: 15 minscook time: 20 minstotal time: 35 mins

ingredients:

1 c. sugar
1/2 c. canola oil
2 eggs
1 1/2 c. flour
1/2 t. ground cardamom
1/2 t. baking soda
pinch of salt
2-3 peaches, peeled, pitted and chopped
1/2 c. brown sugar
1/2  c. flour
2 T. butter


instructions

Whisk together the white sugar, oil, and eggs.  In a separate bowl, combine the flour, cardamom, baking soda, and salt.

Make a well in the dry ingredients.  Pour the liquid ingredients into the well and mix just until combined.  Stir in the peaches.  The batter will be stiff allowing for the moisture from the peaches as they bake.

Divide the batter between a 12 cup muffin tin that has been treated with baking spray.  

Place the brown sugar, flour and butter into a food processor and pulse until crumbly.  Sprinkle over the top of the batter in the pan.

Bake in a preheated 350* oven for 20-25 minutes, until a skewer inserted removes cleanly.  Let cool in pan for 10 minutes before removing to a wire rack to cool completely.

  2. YUM! It is peach season down here and we just purchased and peeled a bunch from an orchard here around town. Now I have something fabulous, besides cobbler and jam, to make with them!

  6. Peach muffins sound like the perfect summer morning breakfast! I can't wait until Peach season is here, it's coming soon! I'm not crazy far from you (in Ontario) so I guess we get them around the same time. Love fresh peaches and use them for everything until the season is done but I haven't tried them in a muffin yet. Love the streusel on top, too. They sound delicious. Hope you had a wonderful trip. Heading over to read about it now :D
