There is a little bit of sadness in today's post too, though. You see, another group to which I have belonged is having it's final event this month. Crazy Ingredient Challenge was a great idea spearheaded by Kelly of Passion Kneaded and Lori of Lori's Culinary Creations.
It started off gangbusters and we had a lot of fun but for the past few months it has dwindled to only a few of us joining in to create a recipe that must contain the 2 ingredients chosen for the month. This, final event, has us using capers and limes. I used those ingredients to create a sauce for these delicious salmon burgers.

Salmon Burgers with Caper Lime Sauce
prep time: 20 minscook time: 6 minstotal time: 26 mins
Tender flakes of salmon mixed with panko and egg, shaped into patties and cooked to perfection on a grill. Served up with lettuce, tomato and a dollop of Lime/Caper Mayo, these make for the perfect Fish Friday barbecue.
ingredients:
1 c. Miracle Whip
juice of half a lime
zest of half a lime
1 T. capers
1 1/2 lbs. salmon fillets, skinned and cut into large dice
2 T. Dijon Mustard
3 green onions, white and light green parts, finely chopped
2 T. chopped Italian Parsley
1/2 c. Panko Bread Crumbs
salt and pepper to taste
olive oil
8 hamburger buns
8 lettuce leaves
8 tomato slices
instructions:
Whisk together the Miracle Whip, capers, lime juice and lime zest in a small bowl. Refrigerate until burgers are ready to be dressed.
Place the Salmon into a large bowl, add the mustard, parsley, green onions, bread crumbs, salt and pepper and gently combine with clean hands. Divide into 8 equal portions and pat into burgers. Place onto a baking sheet and brush on both sides with olive oil.
Heat the grill to medium heat and cook the salmon patties to desired temperature, about 3 minutes per side if you want medium.
Place a patty onto each bun and top with a dollop of the lime/caper sauce, a lettuce leaf and a tomato slice.
