Chunky Monkey Muffins #MuffinMonday

Named after a specialty drink from a nearby restaurant, these delicious muffins are chock-full of banana, chocolate, and coconut.  As an added bonus, I also used up some of the zucchini that is taking up space on my counter.

It's Muffin Monday.......

Our youngest daughter is an EMT, but during the summer months, she also works the gas pumps at a nearby marina and her friend, Raechal, works the restaurant at the same marina.  It is a very busy marina, catering to boaters who keep their boats on site as well as those stopping by to enjoy the amenities offered.

Chunky Monkey Muffins

Their signature cocktail is called a Chunky Monkey.  It contains coconut, chocolate, and banana.  No the cocktail does not include zucchini.  That is my own little touch that I added to these muffins that contain all the same flavors as the cocktail.

Chunky Monkey Muffins

Chunky Monkey Muffins

Named after a specialty drink from a nearby restaurant, these delicious muffins are chock-full of banana, chocolate, and coconut. As an added bonus, I also used up some of the zucchini that is taking up space on my counter.

Ingredients

  • 1 1/2 c. white whole wheat flour
  • 1 t. baking soda
  • 1/2 t. cinnamon
  • pinch of salt
  • 2 very ripe bananas
  • 2 T. coconut oil, melted and cooled
  • 1/4 c. honey
  • 2 t. vanilla
  • 1 egg
  • 1 c. shredded zucchini, squeezed dry
  • 1/3 c. milk
  • 1/2 c. milk chocolate chunks
  • 1/3 c. unsweetened, shredded coconut

Instructions

  1. Whisk together the flour, baking soda, cinnamon, and salt in a large bowl. Make a well in the center.
  2. Whisk together the banana, coconut oil, honey, vanilla, milk, and egg. Pour into the well of the dry ingredients, add the zucchini, and mix just until incorporated.
  3. Stir in the chocolate chunks and coconut. Divide the batter between 12 muffin cups that have been treated with baking spray.
  4. Bake in a preheated 375* oven for 20 minutes, until a skewer inserted removes cleanly.

  1. These look delightful! Great flavor combination. You made me laugh with the zucchini comment about the cocktail. Maybe they should consider the addition!

  2. I love baked goods with banana. It brings a wonderful flavor and adds to the sweetness. These muffins look delicious and no added white sugar- perfect for me.

  3. Still lots of zucchini at the farms here, I need to go grab some! I'm always looking for recipes to use up the last few bananas they never eat :)
