This is a great way to have one last hurrah before grilling season is over. No grill? This chicken can also be baked in a preheated 375* oven for about 30 minutes (internal temperature of 165*), brushing with the marinade halfway through the cooking time.
I enjoyed it with a glass of wine, but an ice-cold beer would also make a perfect pairing.

Beer and Garlic Marinated Chicken
Dark Beer, Garlic, and Herbs tenderize and guarantee flavorful, moist chicken.

Ingredients
- 1/4 c. olive oil
- 4-5 cloves garlic, minced
- juice of 1 lemon
- 1 T. Italian Herb Seasoning
- salt and pepper, to taste
- 1 bottle dark beer
- 8 (6 oz) boneless, skinless chicken breasts
Instructions
- Place the olive oil, garlic, lemon juice, Italian herbs, salt, pepper, and beer into a sealable plastic bag.
- Add the chicken to the bag, release any air, and seal the bag. Massage the bag so all the chicken is covered in marinade, and refrigerate for several hours or overnight.
- Grill or bake the chicken, brushing with the marinade, until an internal temperature of 165* is reached.

Garlic, beer and Italian herbs sound like a winning combination for marinade! It's still grilling weather where we are so I had every intention of grilling my chicken for this event until I couldn't find any charcoal to buy! I'm glad you were able to grill yours!
