Start your morning with a burst of energy. This Avocado Toast topped with slices of tomato and a poached egg will have you raring to go for whatever you have planned this weekend.
I enjoyed this breakfast on Thursday morning while planning my weekly menu before heading out for a hike.
Now that I am home from vacation, Amy and I have set up a schedule to get us ready for the Mammoth March in August. We will be hiking 20 miles in 8 hrs. We regularly hike 3-5 miles at a time, but the longest I have hiked was 10 miles, which was not easy.
We are following the guidelines provided by Mammoth March to prepare, we will still do our regular hiking but each week we will add in one longer walk until the March. Yesterday was only 5 miles, but it will be 8 next week and increase by 2 mile increments each week until the Mammoth March.
I am also trying to prepare by limiting processed sugars and upping my protein and vegetable/fruit intake. This breakfast is perfect fuel before any activity.
Tonight we are going to see the stage play, Tuesdays with Morrie. We will go out for dinner before the show. Tomorrow night some of the kids are coming for dinner. We're hoping the weather predictions are wrong and we can enjoy some time in the pool.
The rest of the week is pretty quiet, gym in the morning, hikes and bike rides in the afternoon and pool time when the weather cooperates. Dinner....every single night. Here's the menu......
Avocado Toast with Tomatoes and Poached Egg
Ingredients
- 1 piece whole grain bread, toasted
- 1/2 avocado
- squeeze of lemon juice
- 1 small tomato, sliced
- 1 egg, poached
- salt and pepper to taste
Instructions
- In a small bowl, combine the avocado with the lemon juice until smooth enough to spread onto toast.
- Cover the toast with the avocado and top with the tomato slices.
- Poach an egg in salted water and place on top of the avocado and tomatoes. Season with salt and pepper and serve.
