Pineapple Rice Krispie Muffins #MuffinMonday

These are not light and airy muffins.  They are dense and moist.  My husband describes them as a cross between a muffin and a cookie.

Pineapple Rice Krispies Muffin Pin

I don't always think before I act.  I was making some Peanut Butter and Pretzel Crispy Treats and bought this HUGE box of Rice Krispies when I was at Costco.  I like Rice Krispies, especially with a banana sliced up in it, but come on......There is enough cereal in that box for me to eat it for a year!!

Now I am looking for ways to use it, so decided to make these muffins for today's event.  I found the recipe on the Kellogs website.  I adapted it slightly, leaving off the streusel but I'm sure they would have been prettier had I included it.  I also did not add ginger because I missed that when I was reading the recipe while making them.

I was very disappointed when I pulled them out of the oven and that was when I realized that I had also forgotten to add the baking powder.  So these muffins without baking powder were very dense and moist but still delicious.  I am printing the recipe to INCLUDE the baking powder.  I am sure that your muffins will turn out much better than mine.

I used dried cranberries instead of raisins, because I also bought a HUGE bag of those at Costco.  Remind me not to go there when I'm hungry!!!

Pineapple Rice Krispie Craisin Muffins

Pineapple Rice Krispie Craisin Muffins

These muffins start with Rice Krispies Cereal and a can of crushed pineapple. They come together in a snap (with perhaps a crackle and a pop as well).
Prep time: 10 MinCook time: 20 MinTotal time: 30 Min

Ingredients

  • 1 1/4 c. flour
  • 1/2 c. sugar
  • 2 1/2 t. baking powder
  • 1/2 t. cinnamon
  • pinch of salt
  • 1 1/2 c. Rice Krispies cereal
  • 1 (8oz) can crushed pineapple in syrup
  • 1/3 c. milk
  • 1 egg
  • 2 T. canola oil
  • 1/2 c. dried cranberries

Instructions

  1. Combine the flour, sugar, baking powder, cinnamon, and salt. Set aside.
  2. In large bowl, combine the cereal with the undrained pineapple and milk. Set aside for a couple of minutes to soften.
  3. Whisk in the egg and oil to the cereal mixture.
  4. Stir the flour mixture into the cereal mixture just until combined. Fold in the dried cranberries.
  5. Divide the batter between a 12 cup muffin pan that has been treated with baking spray.
  6. Bake in a preheated 400* oven for 15-20 minutes, until a skewer inserted removes cleanly.

  1. I love Costco (hope you bought some bacon crumbles!) but with only two of us at home, most of the packages are just too big to be practical. Well done using some of your Rice Krispies in muffins too! Your hybrid cookie/muffin would make a stellar breakfast on the go.

    1. Thanks Stacy. I didn't see the bacon crumbles but I did see precooked bacon in a package. I will have to ask about it the next time I'm there. Perhaps I was looking in the wrong area.

  2. I always sub Rice Krispies in muffins calling for nuts because my guys both are allergic. I love that they are intentionally used in these!

  3. Another vote for the bacon crumbles at Costco! I have also forgotten ingredients before. Sounds like you and Frank are good sports about it!

  4. I wonder how these would be with crushed Rice Chex...somewhat similar to Rice Krispies? I have a little bit of a box left that needs to be used. Definitely worth a try. Maybe for next Muffin Monday!
