This was not my original recipe. I had made a wonderful Creamy Mushroom Soup to share with you however when I went to write my post I discovered that I had somehow deleted all the photos of that dish.
I still wanted to participate so I went on a Google Search and found this Poor Man's Food that was perfect as I had all the ingredients and hadn't had breakfast yet.
If you are a Cream of Wheat fan you are going to love this warm, comforting dish. Made with cornmeal, water, salt and butter it comes together in a snap. I topped mine with light cream and a bit of honey.
Tonight we are having our neighbors over for a Valentine's Day Dinner with a Mardi Gras flair. It should be fun. No plans for Superbowl Sunday.
On Valentine's Day, I have a follow up with the orthopedic surgeon in the morning and Bella gets her stitches removed in the afternoon. I am making one of Frank's favorite meals for dinner that evening to let him know just how much I appreciate him. Friday night we are going to our friends Bob and Cathy's for dinner. I'm looking forward to spending time with them as we plan our trip to Normandy, France in 2024.

Zganci (Slovenian Porridge)
Zganci is a traditional Slovenian dish made with such common, ordinary foods it is often called Poor Man's Food. Served with cream or yogurt it makes a quick and easy breakfast.

Ingredients
- 1 c. water
- 1/4 c. instant polenta(corn flour)
- 1 T. butter
- pinch of salt
- Yogurt or Cream for serving
- Honey for serving, if desired
Instructions
- Place the water, salt and butter in a small saucepan and bring to a boil over med high heat.
- Add the cornmeal, whisking continuously until desired consistency is met.
- Divide between 2 bowls and top with yogurt or cream.
- Pass the honey for those who like a sweeter porridge.
