Cranberry Raisin Bread #BreadBakers

This delicious quick bread is chock full of dried cranberries and golden raisins.  I enjoyed it in the morning with my coffee but it would also make a lovely dessert.

Cranberry Raisin Bread

I found this recipe on Allrecipes.com.  I made several adaptations to it.  I used the juice of one orange and then added milk to make 3/4 cup of liquid and I only used 1 cup each of the dried fruit instead of 3 cups as called for in the original recipe.

2 cups of dried fruit was plenty.  This is a very dense, delicious bread with a cakelike consistency making it suitable for breakfast, a brunch buffet or even a dessert.

Cranberry Raisin Bread

This delicious quick bread is chock full of dried cranberries and golden raisins. I enjoyed it in the morning with my coffee but it would also make a lovely dessert.

Ingredients

  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 t. baking powder
  • 1 t. salt
  • 1/2 t. baking soda
  • 1/4 c. butter, room temperature
  • 1 egg
  • zest and juice of one orange
  • milk
  • 1 c. dried cranberries
  • 1 c. golden raisins

Instructions

  1. Sift together the flour sugar, baking powder, salt and baking soda in a bowl.
  2. Cut in the butter until crumbly.
  3. Add egg, zest, orange juice along with enough milk to equal 3/4 cup. Stir to combine. Fold in the cranberries and raisins.
  4. Scrape the dough into a bread pan that has been treated with baking spray and bake in a preheated 350* oven for 1 hours and 10 minutes, until golden brown and a skewer inserted removes cleanly.

  4. Two ingredients I always have in the pantry are dried cranberries and raisins! Such a great combination in a quick bread!
