Independence--The Day, A Book, My Thoughts

It seems strange to me that we are all celebrating Independence when we took such a backward step in our country.  But, we celebrated our Independence since this country's break from England's rule regardless of the rights of individuals throughout the years.

So, let us celebrate as we always have and appreciate the fact that we do live in a Free and Democratic Country where we can all go out and have our voices heard in the upcoming elections.  THAT is our strength, power and Independence.
Sisters Behaving Badly

Speaking of Independence.  I just finished reading Sisters Behaving Badly by Maddie Please. It was free to Kindle Unlimited Customers so I downloaded it and read it in 1 day as I lounged in my pool.

This is a very easy read, the hardest part is that you might, like me, have to take a break because your stomach hurts from laughing so hard.  Oh my word, but this book tickled me to death.  

It is the story of two sisters who had a falling out and hadn't seen each other in quite some time.  Their Aunt passes away and leaves them a home in France that they travel to together with plans to finish the renovations their Aunt had started, sell the home and return to their separate, estranged lives.

These sisters are a hoot and they learn quite a few lessons about Independence as they allow themselves the opportunity to live, grow and accept themselves and each other for the wonderful people they are.

If you are looking for a quick, easy and fun read for your holiday....this is it!!

Beef Enchilada Lasagna

The first night together Kitty, the younger sister, makes a lasagna for Jenny.  This reminded me that I had yet to share with you the Beef Enchilada Lasagna that I made for the Teen's 18th Birthday.  

Enchiladas and Lasagna are tow of Marissa's favorite meals.  She was thrilled with this casserole that combined them into one delicious dish.  I made up 2 pans of this lasagna as we were feeding a lot of people.  I simply doubled the recipe I found over at Taste of Home.

Beef Enchilada Lasagna

Beef Enchilada Lasagna

My daughters two favorite dishes are Enchiladas and Lasagna. These ingredients and flavors are combined in this recipe for an easy and scrumptious casserole.

Ingredients

  • 1 1/2 lbs. lean ground beef
  • 1/2 Vidalia onion, chopped
  • 1 clove garlic, minced
  • 1 (15 oz) can stewed tomatoes
  • 1 (10 oz) can red enchilada sauce
  • 1 t. cumin
  • 1 egg
  • 1 1/2 c. cottage cheese
  • 4 c. shredded Mexican Blend Cheese
  • 8 (8") flour tortillas, cut in half

Instructions

  1. Cook the beef with the onions and garlic in a large skillet over med high heat until beef is browned and crumbly. Drain if necessary.
  2. Stir in the tomatoes, enchilada sauce, and cumin. Bring to a boil, reduce heat to a simmer and cook for 20-30 minutes, stirring occasionally.
  3. Whisk together the egg and cottage cheese
  4. Place 1/3 of the meat mixture on the bottom of a 9x13" baking dish. Place half of the tortillas on top of the meat mixture, overlapping as necessary. Cover with half of the cottage cheese mixture, another third of the meat mixture and half of the shredded cheese. Repeat this layer with remaining ingredients.
  5. Cover tightly with foil and bake in a preheated 350* oven for about 20 minutes. Remove foil and bake for another 10-15 minutes until cheese is slightly browned and casserole is bubbly.
  6. Let stand for 15 minutes before slicing and serving.
