Cornbread Waffles #NationalWaffleDay

This cornbread is made up in a waffle maker for extra crispness that makes a great "plate" for your favorite chili recipe.

We love waffles around here.  I keep my waffle maker in the garage though so quite often they fall off of my radar.  That's why I was so happy when Audrey invited us to join her for National Waffle Day.

We love waffles, of course, for breakfast and I often make them for the family, offering both savory and sweet selections.  One of the Teen's favorites is Chocolate Malt Waffles, while my husband likes the Sourdough Bacon Waffles  and my favorite is Waffle Benedicts.

If I want to make waffles a little healthier I might use Sprouted Wheat or add in some vegetables like this Pumpkin Waffle and this Sweet Potato Waffle.  Sometimes I don't use waffle batter at all.  Take a look at this waffle made with Tater Tots  or this one made with Cake Batter.  


Chili and Corn Bread Waffle

But I also love to serve up waffles for dinner as I am doing for today's event.  I like these cornbread waffles smothered with chili and all the fixins'.  The Teen prefers hers as a side to the chili.  Either way it is scrumptious.

The next time you get a hankering for corn bread pull out your waffle iron.  Whether you want it to accompany a meal or to serve with butter and honey for a delicious breakfast you will be very happy with the results.

Corn Bread Waffles

Corn Bread Waffles

Savory Corn Bread made in a Waffle Maker. Perfect served topped with your favorite stew or chili, as a side to any dinner or topped with syrup or honey for a delicious breakfast.
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min

Ingredients

  • 1 1/4 c. cornmeal
  • 1 3/4 c. flour
  • 1 T. baking powder
  • 1 t. sugar
  • pinch of salt
  • 2 c. milk
  • 3 T. butter, melted
  • 2 eggs

Instructions

  1. Combine the flour, cornmeal, baking powder, sugar and salt in a large bowl. 
  2. Whisk together the milk and butter and then whisk in the eggs.  Pour into the dry ingredients and stir until combined and smooth.
  3. Cook in waffle iron per manufacturer's instructions. Place finished waffles in a warm oven until all batter is used.
