We love waffles around here. I keep my waffle maker in the garage though so quite often they fall off of my radar. That's why I was so happy when Audrey invited us to join her for National Waffle Day.
We love waffles, of course, for breakfast and I often make them for the family, offering both savory and sweet selections. One of the Teen's favorites is Chocolate Malt Waffles, while my husband likes the Sourdough Bacon Waffles and my favorite is Waffle Benedicts.
If I want to make waffles a little healthier I might use Sprouted Wheat or add in some vegetables like this Pumpkin Waffle and this Sweet Potato Waffle. Sometimes I don't use waffle batter at all. Take a look at this waffle made with Tater Tots or this one made with Cake Batter.
Corn Bread Waffles
Ingredients
- 1 1/4 c. cornmeal
- 1 3/4 c. flour
- 1 T. baking powder
- 1 t. sugar
- pinch of salt
- 2 c. milk
- 3 T. butter, melted
- 2 eggs
Instructions
- Combine the flour, cornmeal, baking powder, sugar and salt in a large bowl.
- Whisk together the milk and butter and then whisk in the eggs. Pour into the dry ingredients and stir until combined and smooth.
- Cook in waffle iron per manufacturer's instructions. Place finished waffles in a warm oven until all batter is used.

While it's too early for me to think about chili, I can certainly wrap my head around these waffles! What about a cornbread waffle BLT?
