    You would think that this would have been an easy assignment for me but I had such a difficult time figuring out what to share.

    One Skillet Chicken and Noodles

    It's summertime so perhaps I wanted to share a recipe that is made on the grill like this Beer Butt Chicken or Grilled Chicken Breasts with Strawberry Butter.

    It's Harvest Season too, so perhaps I should share a recipe that contains our summer bounty like this Coq auVin with Vegetables or this Asian Chicken Salad.

    Of course, I could always share my husband's favorite dish, Chicken Marsala.  Or the Teen's favorite, Chicken Enchiladas.  Maybe something elegant like Garlic Herb Chicken in Puff Pastry or something casual like Chicken Pot Pie.  

    In the end, my decision was made for me by Frank's sister, Roz.  Frank had suffered an accident and broke his back in numerous places.   Roz came by when he got home from the hospital with a huge pot filled with chicken broth, vegetables and chicken pieces along with a bag of egg noodles.  I used half of the broth, chicken and noodles to make soup which we ate for dinner one night and lunch the next day. 

    One Skillet Chicken and Noodles

    A couple of days later I used the remaining broth, chicken and noodles to make this amazingly comforting one skillet dinner.  Chock full of vegetables in a savory sauce, leftovers have never tasted so good.

    One Skillet Chicken and Noodles

    One Skillet Chicken and Noodles

    This delicious, easy, one skillet dinner is a great way to use up any leftover chicken you have on hand.
    Prep time: 10 MinCook time: 20 MinTotal time: 30 Min

    Ingredients:

    • 1 T. olive oil
    • 1 T. butter
    • 8 oz. sliced mushrooms
    • 1 carrot, scraped and sliced into rounds
    • 1 russet potato, peeled and diced
    • 1/2 sweet onion, diced
    • salt and pepper, to taste
    • 1 T. tomato paste
    • 1 T. flour
    • 2 c. chicken stock
    • 2 c. egg noodles
    • 1 c. diced or shredded cooked chicken
    • 1/2 c. frozen peas

    Instructions:

    1. Melt the butter with the olive oil over medium high heat in a large skillet.  Add the onion, carrots, potato and mushrooms.  Season with salt and pepper and cook for a few minutes until the crisp tender.
    2. Add the tomato paste and flour, stirring to coat the vegetables.  Add the chicken stock, bring to a boil.  Add the noodles, reduce heat to simmer.  Cover and cook for anothe 10-15 minutes until the noodles and vegetables are tender.
    3. Stir in the chicken and peas and cook until heated through.  Taste and season with additional salt and pepper, if needed.
