Sweet Potato Casserole with Pecan Streusel #FallFlavors

This custard like sweet potato casserole topped with a delicious pecan streusel is sure to become the new family favorite at your holiday table.


My grand-niece, Lili, whose hand you see scooping out some of this amazing casserole, leaned over to me during family dinner and said "these are the best sweet potatoes I have ever eaten".  That made my heart sing.
Then when my son in law, Doug, took a bite and said "Holy SH**, that's a good crust on those sweet potatoes", my heart soared.

My recipe today features product from sponsor, Millican Pecan Company.  I found this recipe on Epicurious.com.  I am always pleased with how their recipes turn out.  This recipe was originally posted in the November 1998 Bon Apetit magazine and was from The Olde Union House in New Jersey.

Sweet Potato Casserole with Pecan Streusel

This custard like sweet potato casserole topped with a delicious pecan streusel is sure to become the new family favorite at your holiday table.

ingredients:

  • 1 c. brown sugar
  • 1/2 c. pecan pieces, I used Millican 
  • 1/2 stick butter, cut into small dice
  • 5-6 sweet potatoes, peeled 
  • 4 eggs
  • 3 T. maple syrup
  • 2 T. vanilla
  • 1 T. lemon juice
  • salt to taste

instructions:

How to cook Sweet Potato Casserole with Pecan Streusel

  1. Combine the sugar, pecans and butter in a small bowl.  Refrigerate until ready to use.
  2. Cut the potatoes into chunks and place in a pot of boiling, salted water.  Cook until easily pierced with a fork.  Drain into a colander and let stand until they dry and cool a bit.
  3. Transfer the partially cooled sweet potatoes to a food processor and puree until smooth.  Open the processor and let cool some more.
  4. In large bowl of stand mixer, fitted with the paddle attachment, beat the eggs, syrup, vanilla, lemon juice and salt, until well combined.  Add the potatoes, a little at a time at first so as to not scramble the eggs, and beat well.  Continue adding the potato puree until fully incorporated. Turn into a 9x13" pan that has been treated with cooking spray and smooth the top with a spatula.
  5. Sprinkle the pecan topping over the potatoes and bake in a preheated 350* oven for about an hour, until bubbly and golden brown on top.  Let stand for 15 minutes before serving.
