Beef Pot Roast with Apples and Onions #FoodieExtravaganza

When Fall weather hits, I immediately start craving warm, homey comfort foods.  This pot roast flavored with apples and onions fits the bill perfectly.  You are going to want to mash some potatoes because the gravy is to die for!

Life doesn't get much simpler than throwing a rump roast in the slow cooker and surrounding it with onions and apples.  Add some seasonings and minced garlic, put on the lid, set the timer and walk away.


You don't see the apples and onions in the finished product but the gravy is full of their flavor.  Served over mashed potatoes with a vegetable and a lovely bottle of wine, this is the perfect Fall Feast.


I took a break from the Fall Flavors event today to take part in the Fall Flavors we are sharing with the Foodie Extravaganza gang but tomorrow I am sharing another roast made in a crockpot.  This one is a pork loin encrusted in a coffee and Autumn spiced rub.  See you then.

Pot Roast with Apples and Onions

When Fall weather hits, I immediately start craving warm, homey comfort foods. This pot roast flavored with apples and onions fits the bill perfectly. You are going to want to mash some potatoes because the gravy is to die for!

ingredients:

  • 3-4 lb. rump roast
  • 1 c. beef broth
  • 1 t. seasoning salt
  • pepper, to taste
  • 1 t. Worcestershire sauce
  • 2 cloves garlic, minced
  • 2 tart apples, cored and quartered
  • 1 lg. onion, cut into chunks
  • 2 T. cornstarch
  • 2 T. water

How to cook Pot Roast with Apples and Onions

  1. If using an Instant Pot, start on the saute setting and heat the olive oil to brown the roast otherwise you can use a skillet to brown the roast on all sides.  Remove the roast from the Instant Pot or skillet and add the beef broth.  Cook and stir, scraping up any browned bits.
  2. If using an Instant pot return the roast to the pot at this time.  Otherwise place the roast into a slow cooker and pour the broth with the scraped up bits over it.
  3. Add the apples and onion to the slow cooker.  Season the meat, apples and onions with the salt, pepper and Worcestershire sauce.  Add the garlic, cover and cook on low for 6-8 hrs. 
  4. Remove the roast from the slow cooker and let rest for about 15 minutes on a carving board, tented lightly with foil.  Strain the liquid from the crock pot into a pan, discarding any solids including the apples and onions.
  5. Place the pan over med high heat and bring to a boil.  Combine the cornstarch and water.  Whisk into the boiling broth, cooking and stirring until thickened.  Season with salt and pepper.  
  6. Remove the netting from the roast and slice.  Lay onto a platter and top with some of the gravy.  Serve with remaining gravy in a bowl for people to add more as desired.
