Make Ahead Sourdough Dinner Rolls #BreadBakers

These crusty sourdough dinner rolls need an overnight rise but I think after one taste you will think it is worth the extra effort.

This month the #BreadBakers, hosted by Karen of Karen's Kitchen Stories, are baking breads that can be made ahead and rested, either in the refrigerator or at room temperature, before baking. It's a great way to develop flavor.  I had been planning on making these rolls for a couple of weeks but for some reason they kept getting put on the back burner.

I thought this idea would help make the holidays easier for our readers.  It's a great idea but I couldn't find time to make my make ahead bread.  I would crawl into bed at night and think "Oh Sh**, I forgot the bread again".  Instead of getting my butt up I would tell myself I would do it the next night.  Repeat performance several nights in a row.



So finally, yesterday afternoon, when I got home from losing a couple of sleeves of my shirt (but not the whole thing) at the casino I made this bread dough as soon as I walked in the house.  This morning I awoke, divided the dough and set them out for the final rise.



A couple hours later into the oven they went.  Thankfully they turned out beautifully and I was able to write and submit this blog post.  Just in the nick of time.

Make Ahead Sourdough Rolls

These crusty sourdough dinner rolls need an overnight rise but I think after one taste you will think it is worth the extra effort.

ingredients:

  • 1 3/4 c. bread flour
  • 1/2 c +2 T. warm water (105*)
  • pinch of salt
  • 6 T. sourdough starter or discard

instructions:

How to cook Make Ahead Sourdough Rolls

  1. Place the flour, salt, water and sourdough into the large bowl of a stand mixer, fitted with the paddle attachment.
  2. With the speed on low, incorporate all ingredients.  Increase speed and mix until a dough is formed. 
  3. Cover the bowl with plastic wrap and let sit on the counter overnight. 
  4. In the morning, punch down the dough and divide into six equal pieces.   Form each piece into a ball and place onto a baking sheet that has been covered with parchment or a silicone mat.
  5. Sprinkle with flour, cover with a warm damp towel and let rise for another 1 1/2 - 2 hrs., until puffy.
  6. Using a sharp knife, make a slash in each roll, spray with water and bake in a preheated 425* oven for 20-25 minutes, until golden brown and hollow sounding when tapped.

  1. Crawling back out of bed is infinitely more difficult than crawling into bed! BTDT! (Been there, done that, said the same thing!) Regardless, these look awesomely crusty and delicious.
