Baking with Summer Berries

I found this recipe for these Strawberry Shortcake Bars in Cuisine at Home.  When this month's theme was chosen I knew that I was going to make it.  I am so glad that I did.

You start with a butter cookie crust to which you have folded in fresh strawberries and white chocolate chips.

Press half the cookie mixture into a baking pan and top with strawberry preserves.

Top with the remaining cookie mixture and bake to a beautiful golden brown.

While the bars are baking you make a quick glaze in which you coat additional fresh strawberries.  When ready to eat just spoon the fresh berries on top and add a dollop of freshly whipped cream.

  4. What a fun idea, not only eating the strawberries on top, but baking them into the biscuit. Love this idea and the recipe as well.
