Scenes from Last Weekend's Celebration and the Weekly Menu

Last Sunday, we celebrated our Teen receiving the Sacraments of Eucharist and Confirmation.  She is now fully in communion with our faith.  We couldn't be prouder.



After the Mass we invited our friends and family to gather with us for a celebration.  Luckily this was early enough not to interfere with any Superbowl Plans anyone had.

We had a Mexican Fiesta at Marissa's request and I am sharing a recipe for a Mexican 7 Layer Dip that was perfect for our party and for any Superbowl gatherings too.  I think everyone has their own favorite version of Mexican 7 Layer Dip, mine is originally from Gooseberry Patch.



This weekend is a little quieter than last.  Today we are attending an open house at the Community College that offers a program called Middle College.  Basically the Teen withdraws from high school and enrolls in the Community College.  For the first two years she will attend classes at both the high school and the college campus.  She will walk with her class at commencements but will not receive a diploma.  Her third year is strictly college classes which, after completion, she will be award both her High School diploma and her Associates Degree and be ready to move on to a 4 year University.

Other than that it is going to be pretty quiet around here.  On Valentine's Day we are taking the Teen and the Angel Face out for dinner and then to see Matilda the Musical at our local theater.  Looking forward to that.

Mexican 7 Layer Dip

Mexican 7 Layer Dip

Classic dip perfect for your next gathering.

ingredients:

  • 1 (16 oz) can refried beans
  • 1 (16 oz) carton sour cream
  • 4 T. taco seasoning
  • 2 avocados, pitted, peeled and mashed
  • juice of 1/2 lemon
  • 3 cloves garlic, minced
  • 2 c. Shredded Cheddar Cheese
  • 4 scallions, white and light green parts, sliced
  • 1 (2 oz) can sliced black olives
  • 1 tomato, diced

instructions:

How to cook Mexican 7 Layer Dip

  1. Spread the refried beans in the bottom of a 10" glass pie plate.  
  2. Combine sour cream with the taco seasoning and spread on top of beans. 
  3. Mix together the avocados, lemon juice and garlic.  Spread over the sour cream.
  4. Sprinkle with cheese to cover, followed by scallions, olives and tomatoes.
  5. Serve with Tortilla chips.
