The Weekly Menu...A Day Late

I spent all day yesterday at a scrapbooking event creating my Christmas cards for this year so I did not get to my weekly menu.  My niece, Jen, and her family were down for the event as well as my friend, Cathy, who also lives up north and they all spent the night last night.  When we got home we were all sitting around having wine and laughing and having more wine and laughing even harder.  It was a great night but suddenly it occurred to me that I was going to have 7 people to feed breakfast in the morning so I stepped away from the wine long enough to throw together a breakfast casserole that could refrigerate overnight and that we enjoyed immensely this morning.  I served it with some fresh berries and an almond loaf made with a mix from tastefully simple.

Sausage and Cheese Breakfast Casserole

8-10 slices bread ( I used whole wheat because that is what I had, but any bread will do and stale                                         bread works very nicely in this recipe)
8 eggs
1 1/2 c. half and half (or milk)
1 lb. bulk pork sausage, cooked and crumbled.
2 c. shredded colby-jack cheese
salt and pepper to taste

Cube the bread and scatter over the bottom of a greased 9x13 baking pan.  Sprinkle with the cheese and pork sausage.  Whisk eggs and cream in a small bowl, season with salt and pepper.  Pour over ingredients in baking pan.  Cover and refrigerate overnight.  In the morning, bake at 375* for 45-50 minutes, until eggs are puffed and set.  Print Recipe

There is nothing on the schedule for this week....I know, crazy, right??  I have Parish Council Meeting on Monday and I am taking my friend Karen for gall bladder surgery on Thursday during the day and then we have choir that night so we will be having leftovers.
