Double Chocolate Muffins #BreadBakers

Greet your Valentine (s) with a cup of coffee or tea and one of these deep chocolate muffins studded with dark chocolate morsels.  They will start off the day knowing how much they are loved.

Nothing says love like sweets for your sweet, so I chose to make my family these Double Chocolate Muffins.  I had baked them in my heart-shaped muffin pan, but they had more of a rise than expected, so you can only tell from the bottom LOL.

So I pulled out my heart platter and my dessert plates marked with love and watched with satisfaction as Frank and the girls enjoyed an expression of my love.   They say it's all in the plating anyway, right?

Double Chocolate Breakfast Muffins

Double Chocolate Breakfast Muffins

This small-batch recipe starts with a deep chocolate batter that is studded with dark chocolate morsels. Love in every bite.

Ingredients

  • 1/3 c. Dutch-process cocoa
  • 1 c. flour
  • 1/2 c.+ 2T. brown sugar, packed
  • 1/2 t. baking powder
  • 1/2 t. espresso powder
  • 1/2 t. baking soda
  • pinch of salt
  • 1/2 c. dark chocolate morsels
  • 1 egg
  • 6 T. milk
  • 1 t. vanilla
  • 1 t. apple cider vinegar
  • 4 T. butter, melted and cooled

Instructions

  1. Combine the cocoa, sugar, flour, baking powder, baking soda, espresso powder, and salt in a large bowl. Form a well in the center of these ingredients.
  2. Whisk together the egg, milk, vanilla, vinegar, and butter. Pour into the well of dry ingredients and mix just until combined. Fold in the chocolate morsels.
  3. Divide the batter between 6 muffin cups that have been lined with paper or treated with baking spray and bake in a preheated 350* oven for 20-25 minutes, until a skewer inserted in the center removes cleanly.
