St. Lucian Rum Punch #EattheWorld

We are in the middle of a deep freeze here in Michigan.  We have been below freezing for the past 23 days here in my area.  So when St. Lucia was chosen as our destination this month, my thoughts immediately went to sunshine, beaches, and cocktails......

We normally go on a dive trip during the cold winter months, but this year it wasn't in our budget as we have a trip to Greece planned in June.  We did, however, book a short trip to Tucson, Arizona, to visit with friends, so Frank made up this cocktail to celebrate.

We enjoy Rum Punches on every island we visit.  I have not had the pleasure of visiting St. Lucia, but it is on my bucket list.  All of the rum punches are pretty similar.  This St. Lucian version is flavored with nutmeg and cinnamon.

St. Lucian Rum Punch

St. Lucian Rum Punch

A delicious blend of tropical juices and Caribbean Rum flavored with a touch of nutmeg and cinnamon.

Ingredients

  • 1/3 c. lime juice
  • 1 c. orange juice
  • 1 c. pineapple juice
  • pinch of cinnamon
  • pinch of nutmeg
  • 2 shakes of angostura bitters
  • 6 oz. rum of choice
  • 1/2 c. simple syrup
  • Grenadine to color

Instructions

  1. Combine the juices, cinnamon, nutmeg, bitters, rum, and simple syrup in a pitcher or carafe. Add the grenadine until the mixture is the color of a Caribbean sunset.
  2. If not serving immediately, refrigerate until ready to serve. Fill two large glasses with ice and divide the cocktail between the glasses.
