I am still proud to live in the USA, even though I believe the current Governing Regime is going to go down as the darkest time in our nation. I trust that this will be over soon, when we can vote the majority of his supporters out next year. Hopefully, it will not be too late for us to recover and regain the trust of the rest of the free world.
We celebrate Independence Day on July 4th, when we broke free from the tyranny of a King who cared little for his people. We find ourselves in this situation again, but we prevailed once, and I pray we prevail again very soon, peacefully, democratically, with little or no bloodshed.
I am looking forward to celebrating our Independence and will be inviting family and friends over for a gathering poolside on the deck. We will be grilling, and then we will enjoy a slice of this Watermelon Pizza for dessert.
I used a little bit of cookie icing to help keep the berries in place as I was transporting this to a birthday party in memory of my dear friend, Kirsten, who would have been 62 today. This is completely optional and when I make it to serve at home, I will probably not use it.

Watermelon Pizza
This is a fun, easy dish to share at your Independence Day gathering.

Ingredients
- 2 slices of Watermelon, 1-2" thick, cut from the center of the melon
- Berries of choice, I used Blueberries and Blackberries
- 1/2 c. Non-Fat Greek yogurt
- 1 T. honey
- Cookie icing, if needed/desired
Instructions
- Sprinkle the Watermelon Slices with the berries, if desired, use a little bit of cookie icing on each berry to hold it in place.
- Combine the yogurt and honey. Spoon into a plastic bag. Snip the corner from the bag and drizzle the yogurt over the watermelon and berries.
- Use a pizza cutter or sharp knife to cut the slices into 8 wedges each.

I was looking forward to seeing this one, Wendy, as I had no idea how you were making pizza with watermelon. 🤦♀️ I feel really silly now. This is a great idea and so creative! The ideal summer dessert, especially poolside.
