Boxty

It's time for Bread Bakers......

BreadBakers
I am hosting this month and asked the others to join me in sharing Irish Breads in honor of St. Patricks Day which is right around the corner.  Let's see what everyone baked up for us today......

#BreadBakers is a group of bread loving bakers who get together once a month to bake bread with a common ingredient or theme. Follow our Pinterest board right here. Links are also updated each month on this home page.

We take turns hosting each month and choosing the theme/ingredient.

Boxty

This recipe can be made to be baked in the oven.  Simply add some baking soda and incorporate the fat into the dough instead of using it as your frying agent.

I chose to make mine as pancakes to use as a side dish for dinner one night by frying the batter up in olive oil.  They were delicious, as all potato pancakes are, but I think that next time I am adding some onion to the batter.

  2. This is one of my favorite things to make with leftover mashed potatoes! I never knew it was Irish or had a name! I'll have to ask my mom now because maybe it came from her Irish side of the family. Who knew?
