This recipe can be made to be baked in the oven. Simply add some baking soda and incorporate the fat into the dough instead of using it as your frying agent.
I chose to make mine as pancakes to use as a side dish for dinner one night by frying the batter up in olive oil. They were delicious, as all potato pancakes are, but I think that next time I am adding some onion to the batter.

Boxty
These Irish Potato Pancakes use both mashed and grated fresh potatoes mixed with flour and eggs that are then fried up to a beautiful golden brown.

Ingredients
- 1 russet potato, peeled and grated
- 1 c. flour
- 1 c. leftover mashed potatoes
- 1 egg
- 1 T. milk
- salt and pepper, to taste
- 1/4 c. olive oil
Instructions
- Toss the grated potatoes with the flour. Add the mashed potatoes and stir to combine
- Whisk together the egg and milk. Add to the potatoes with salt and pepper. Use clean hands to mix until thoroughly combined.
- Form into 6 patties of the same approximate size. Set aside.
- Heat the olive oil in a large skillet over med high heat. When hot, add the patties to the pan and fry until golden brown, about 4-5 minutes. Flip and cook until bottom is golden brown, another few minutes.
- Drain on a paper towel lined plate and serve.

DeleteThis is one of my favorite things to make with leftover mashed potatoes! I never knew it was Irish or had a name! I'll have to ask my mom now because maybe it came from her Irish side of the family. Who knew?
