I made these rolls following directions from Fleischmans.  I adapted it by substituting the Frosted Cinnamon Buns coffee for water.  I used active dry yeast instead of rapid rise and I made the rolls in the evening and refrigerated them so that in the morning I could take them out, allow them to rise, bake them and serve them up for breakfast with a wonderful cup of Door County Coffee.

They take about a half hour to bake and then need to sit for about half an hour before you frost them.  They are worth the wait......

Coffee Cinnamon Rolls

Coffee Cinnamon Rolls

These scrumptious cinnamon rolls are flavored with frosted cinnamon buns flavored coffee for an extra punch of cinnamon goodness and a layer of coffee flavor along with the love which with they are served.

Ingredients

  • 4 1/2- 5 c. flour
  • 2/3 c. sugar, divided
  • 2 packets (4 1/2 t.) instant dry yeast
  • 1 t. salt
  • 1 1/2 c. brewed coffee (I used Door County flavored coffee)
  • 11 T. butter, room temperature, divided
  • 1 egg
  • 2 t. cinnamon
  • 2 1/2 c. powdered sugar
  • 2-3 T. milk
  • 1/2 t. pure vanilla paste ( I used T&C)

Instructions

  1. Combine 2 cups of the flour, 1/3 cup of the sugar, yeast and salt in the bowl of a stand mixer fitted with the paddle attachment.  Turn on low and stir until blended.
  2. Place the coffee and 6 Tablespoons of the butter into a microwave safe 2 cup measuring cup.  Microwave in 30 second increments until the temperature reaches 120-130*.  Butter may not be completely melted.  
  3. Add to the flour mixture and mix on low speed until absorbed.  Add the egg and mix on med high speed for about 2 minutes, scraping the bowl occasionally. 
  4. Add another cup of flour, starting with low speed and increasing until high for another 2 minutes, scraping as needed.  Stir in enough of the remaining flour to form a ball.
  5. Switch to the dough hook and knead on medium high for 8-10 minutes, until the dough is smooth and elastic and springs back when touched.  Cover with a towel and allow to rest for 10 minutes.
  6. Using a rolling pin on a lightly floured surface, roll the dough into a 10x15 rectangle.  Spread 3 Tablespoons of the butter over the dough leaving a 1/2" border at the edges.  Combine the remaining 1/3 cup sugar with the cinnamon.  Sprinkle over the buttered dough.
  7. Starting with the long end of the rectangle, roll tightly and pinch to seal edges.  Trim the ends and then cut into 12 equal pieces.  I used a serrated slicing knife and it worked well.  Place into a 13x9" baking pan that has been treated with baking spray.  Cover loosely with plastic wrap and refrigerate overnight.  
  8. In the morning, remove from the refrigerator and allow to double in size in a warm draft free area, about one hour.  Bake in a preheated 350* oven for 25-30 minutes, until golden brown.  Let cool in pan on wire rack for at least 20 minutes before frosting.
  9. To make frosting place the powdered sugar, remaining 2 Tablespoons of butter, vanilla and 2 Tablespoons of milk in the small bowl of a stand mixer fitted with the whisk attachment.  Beat at low speed until combined and then increase speed and whip until light and fluffy, adding more milk 1 teaspoon at a time until desired consistency is reached.
