Soft Baked Banana Oatmeal Bars #BakingBloggers

Delicious combination of oats, banana, maple syrup and peanut butter can be put together the night before and baked in the morning for a delicious breakfast topped with a little bit of milk or cream.

My friend Sue of Palatable Pastime invited us to join her today in sharing recipes that include bananas as a main ingredient.

I am always looking up ways to use all of those over ripe bananas that I move from my counter into the freezer each week.  Of course, you could also use fresh bananas but I find in this household the bananas ripen faster than I use them so my freezer is always full.

June 2020: Let's Go Bananas!

My husband always grabs a bunch of bananas when he goes to the store.  We might eat one or two with our peanut butter toast in the morning and then the rest remain on the counter unless Frank makes banana splits which is his real reason for buying them.

Sometimes I will get creative and use the fresh bananas in a recipe like these Banana Mummy Rolls I made one Halloween, this no bake Banana Coconut Cream Pie or this Banana Pineapple Salad.  But mostly they go into the freezer to be made into bread, muffins or this amazing Tropical Upside Down Cake.

When trying to figure out what to make with all of my over ripe bananas for today's event, I came across a recipe by Joy Food Sunshine that sounded delicious.  The version that Laura shared was Vegan so I adapted it to use ingredients I had on hand.

And it did turn out delicious however it was much softer than the bars that I had envisioned serving up for dessert on the night I made these.  I did taste test one as a bar and it was excellent, just not very portable.

So we had ice cream, sans bananas, for dessert and this Baked Oatmeal, was rewarmed in the morning and served up as breakfast topped with a little light cream.  It was delicious. Banana and Peanut Butter is one of my favorite flavor combinations and the addition of the maple syrup and cinnamon took this dish right over the top.

Soft Baked Banana Oatmeal Bars

Delicious combination of oats, banana, maple syrup and peanut butter can be put together the night before and baked in the morning for a delicious breakfast topped with a little bit of milk or cream.

Ingredients:

  • 1 1/2 c. quick cooking oats
  • 1 t. baking powder
  • pinch of salt
  • 1 t. cinnamon
  • 2 over ripe bananas
  • 1/4 c. creamy peanut butter
  • 1 t. vanilla
  • 1/4 c. maple syrup
  • 1 egg
  • 3/4 c. milk 
  • light cream or milk for serving, if desired

Instructions:

  1. In large bowl of stand mixer fitted with paddle attachment, cream together the banana and peanut butter.  Add vanilla, syrup and egg.  Mix until combined.  On low speed stir in the milk.
  2. Add the oatmeal, baking powder, salt and cinnamon to the bowl and with speed still on low, mix until combined. 
  3. Pour into a 9" square baking pan that has been treated with baking spray.  Bake in a preheated 350* oven for 30-40 minutes, until the top springs back when touched.
  4. Cut into 9 bars.  Place a bar into a shallow and top with a bit of cream.  Enjoy while still warm.

Notes:

These bars can be refrigerated and each serving can be rewarmed as needed. They will keep for up to one week, covered in the refrigerator. Recipe adapted from one found at JoyFoodSunshine.
