Turkey Nachos with Cranberry Salsa #CranberryWeek #FoodieExtravaganza

This is my second contribution to the celebration of Cranberry Week........


When Caroline of Caroline's Cooking invited us to join her in celebrating Cranberries I was thrilled.  Cranberry week is always a lot of fun and there are always so many creative recipes shared.



Since today is also National Nachos Day, Stacy of Food Lust People Love, invited the members of Foodie Extravaganza to join her in sharing Nacho recipes.

Lucky for me, I had a marvelous recipe that not only fit both categories perfectly it also allows me to provide you with a way to use up some of those Holiday Leftovers.


Best of all, this recipe only takes a short amount of time and very little effort.  I don't know about you but even though I love to cook, the day after a holiday is always a lazy day for me.  These are ready with in no time, are easy peasy and can be enjoyed while you veg out on the couch because you are too lazy to set the table.  


These are also great made up with leftover chicken if you get a hankering for them but don't want to roast a turkey to satisfy the craving.  The salsa can be made with homemade cranberry sauce or or canned.  It can be chunky or smooth.  It is all up to your personal taste.

Leftover Turkey Nachos with Cranberry Salsa

ingredients:

  • 7-10 oz Tortilla Chips (about half a bag)
  • 2 c. leftover turkey, shredded
  • 1  (15 oz) can black beans, rinsed and drained
  • 1 1/2 c. shredded Mexican Blend Cheese
  • 1  c. leftover cranberry sauce
  • juice of 1/2 lime
  • 1 jalapeno pepper, seeded, cored and minced
  • 1 clove garlic, mince
  • 1 scallion, white and light green parts, thinly sliced

instructions:

How to cook Leftover Turkey Nachos with Cranberry Salsa

  1. Line a baking sheet with aluminum foil.  Cover the bottom with corn chips.  It is okay if they overlap a bit.  Sprinkle the leftover turkey and beans over the chips and then cover all with the shredded cheese.  You can repeat layers if necessary depending on how large your baking pan is and how many you are serving.
  2. Place into a preheated 350* oven and let bake until the nachos are warmed through and the cheese is melted, about 10 minutes.  
  3. While the nachos are baking, combine the cranberry sauce lime juice, garlic, scallions and jalapeno pepper.    Serve salsa drizzled over the nachos or on the side, as desired.
