Today I'm sharing a small batch of muffins that I made up to go with spaghetti dinner earlier in the month. I am an unashamed carboholic and always like to have bread of some sort to go with my pasta. I don't understand what people that don't have bread with their pasta use to get up all that sauce from the plate LOL.
Garlic Bread Muffins
Yield: 6 muffins

These savory muffins made with roasted garlic and cheese are the perfect accompaniment to your pasta dinner.
ingredients:
- 1 small head of garlic
- 1 t. olive oil
- 1 c. flour
- 1 t. baking powder
- pinch of salt
- 1 T. sugar
- 1 egg
- 1/2 c. milk
- 1/2 c. shredded mozzarella
- Dried Italian Herbs, if desired

How to cook Garlic Bread Muffins
- Cut off the top of the garlic head, exposing the cloves. Place root side down on a piece of aluminum foil. Drizzle with the olive oil and seal in the foil. Place into a 400* oven for 20-30 minutes, until very soft and fragrant.
- Remove from oven, open foil and let cool.
- Combine the flour, baking powder, sugar and salt in a bowl. Whisk together the egg and milk. Squeeze the roasted garlic from the bulb into the egg mixture and whisk again until incorporated. Make a well in the dry ingredients and add the egg mixture. Stir just until combined. Stir in the cheese.
- Divide the batter between 6 muffin cups that have been treated with baking spray. Sprinkle the tops with Italian Herbs, if desired. Bake in a preheated 375* oven for 15-20 minutes, until a skewer inserted removes cleanly.
NOTES:
Prep time includes allowing the garlic to cool.
Cook time includes the roasting of the garlic.

Garlic and cheese! I'm so in. I often make garlic bread to go with a pasta meal, along with a mixed salad, which balances it all out, right?

DeleteThese remind me of a bread mom used to make that we adored. (Actually, it was little more than canned biscuits chopped up, butter and a herbed salad blend.) Yours look much better! :)
