Mac and Cheese Muffins #HolidaySideDish #MuffinMonday

I chose to share a recipe for individual Mac and Cheese made in muffin cups.  Why?  Well because today is also Muffin Monday, an event we celebrate on the last Monday of each month.  This month, Sue of Palatable Pastime asked us to go rogue and serve up anything that can be made in a muffin pan.

I entertain A LOT during the holidays.  We have many fancy sit down dinners but we also have a lot of casual get togethers, including my very favorite when all the Grands come to have brunch and visit with Santa.


This year I am serving up a buffet that will include these wonderful individual mac and cheese cups.  The Angel Face, the Teen and all the great nieces and nephews are going to be thrilled.



The holidays around here start with Halloween and go non stop until January 6th when we have a final celebration for Epiphany.  Then we take a short break until it is time for Chinese New Year, Nicole's Birthday and Valentine's Day.


We've already celebrated Amy's Birthday this month and had a pumpkin carving party.  Next up is our Annual Scrapfest next Saturday. This means my TC family will be here for the weekend and I will be starting my Christmas Cards.  Wooohooooo.  When do the holiday celebrations start at your house?

Mac and Cheese Muffins

Mac and Cheese Muffins

Individual size mac and cheese made in a muffin tin. Delicious hot from the oven as side dish or room temperature making them great for the lunch box.
prep time: 5 Mcook time: 40 Mtotal time: 45 M

ingredients:

  • 1/2 lb. elbow macaroni noodles cooked per package directions
  • 3 T. butter
  • 4 oz. heavy cream
  • 1 c. shredded Colby Jack cheese
  • 1/2 c. shredded Mozzarella cheese
  • salt and pepper, to taste

instructions:

How to cook Mac and Cheese Muffins

  1. Heat the butter and cream in a sauce pan over med heat until butter is melted.  Add the noodles, cheeses, salt and pepper.  Cook and stir until cheese is melted and pasta is coated with sauce.  Add a little more cream, if desired.
  2. Divide the pasta between 6 jumbo muffin cups that have been liberally treated with baking spray.  Bake in a preheated 350* oven for 20-30 minutes, until the top is golden brown.
  3. Let cool in pan for 10-15 minutes before removing and serving.

  1. I knew I would love these, just from the title, Wendy. For mac and cheese, I am all about the crunchy outside bits and baking it in a muffin pan increases those exponentially! So much surface area. It's almost all crunchy outside bits. Brilliant!

I think the best part as far as holidays go, is that whoever makes them knows exactly how many servings because everyone will pick up just one and not have "Uncle Bob" take half the pan. How many servings is one of the most common holiday meal questions I get from readers.
