Crempogen (Milk Pancakes)

These Welsh pancakes are light, fluffy, tender and delicious.  I topped mine with butter and pure maple syrup but you can use your favorite toppings and serve them for breakfast, a snack or dessert.

Sue of Palatable Pastime invited us to bake up an English, Scottish or Welsh recipe.  Now you would 
think that being a joint administrator of this group and based on the name of this group that it is pretty evident your recipe needs to be baked.



I happily, went in search of recipes and was excited when I found this Welsh recipe for pancakes or Crempogen.   I made them up for us for breakfast quite a while ago, took my photos and then contentedly put Baking Bloggers on the back burner, so to speak.

It wasn't until I started writing this post that I realized that it wasn't in compliance with the rules of this group.  So I cannot join in with the others posting for Baking Bloggers this month but I can share the recipes that they made.  As you will see all of them are baked so evidently I was the only one suffering a brain fart this month......

Crempogen (Welsh Milk Pancakes)

These Welsh pancakes are light, fluffy, tender and delicious. I topped mine with butter and pure maple syrup but you can use your favorite toppings and serve them for breakfast, a snack or dessert.

ingredients:

  • 1 c. flour
  • 2 T. sugar
  • 2 t. baking powder
  • pinch of salt
  • 1 c. milk
  • 2 T. butter, melted
  • 1 egg

instructions:

  1. Whisk together the flour, sugar, baking powder and salt.  Make a well in the middle of the dry ingredients.
  2. Whisk together the milk, melted butter and egg.  Pour into the well of dry ingredients.  Whisk just until combined.
  3. Place a griddle or skillet over medium heat.  When hot, spoon the batter onto the griddle, leaving space for expansion.
  4. Cook until the surface of the pancakes are dry around the edges and have bubbles that have burst, 1-2 minutes.  Check to ensure the bottom is golden brown, flip and cook other side for 1-2 minutes longer, until second side is golden brown and pancake is cooked through.
  5. Serve with toppings of choice.
