Vodka Collins #KitchenMatrixCookingProject

This cocktail is perfect for hot summer weather.  It is cold, bright, sparkling and refreshing.

At the beginning of this year, Cam of Culinary Adventures with Camilla invited Karen, of Karen's Kitchen Stories and I to join her on a year long journey cooking our way through the Kitchen Matrix Cookbook by Mark Bittman.


It is hard to believe we are finishing up our 7th month.  We post a recipe each Tuesday that was inspired by a section of Bittman's Cookbook.  

This week, Cam, chose the section Cocktails +12 Ways.  Bittman had this section broken down into 4 categories, Gin, Vodka, Tequila and Bourbon.  He then gave 3 drink ideas for each liquor.

I decided to make a Collins.  Bittman served up a Tom Collins which contains Gin.  I am not a Gin drinker, preferring Vodka.  I followed Bittman's directions, substituting Vodka for the Gin.

This was a wonderfully refreshing drink.  The brightness of the lemon and the effervescence of the soda makes it the perfect Summer Sipper.

Vodka Collins

This cocktail is perfect for hot summer weather. It is cold, bright, sparkling and refreshing.

ingredients:

1/4 c. gin
juice of half a lemon
1 T. simple syrup
club soda
lemon wedge, for garnish if desired.

instructions

Fill a large glass with ice.  Combine the vodka, lemon juice and simple syrup.  Pour it over the ice and then fill the glass with the club soda.  Stir lightly and garnish with a lemon wedge.
