Karen of Karen's Kitchen Stories is hosting this week and invited us to join her in sharing Carrot recipes.  We eat a lot of carrots around here because it's one of my husband's favorite vegetables.  I'm excited to find more ways to serve them.  Let's take a look........

During the cold-weather months, I usually roast my carrots in the oven, as in these Maple-Glazed Carrots, but in the summer, I prefer grilling.   I'm sharing a recipe for four servings, but you can make this for as many people as you have gathered around the table.

Grilled Carrots

Grilled Carrots

 Grilling carrots is a wonderful way to bring out their sweetness while still leaving them tender-crisp. 

Prep time: 5 MinCook time: 10 MinTotal time: 15 Min

Ingredients

  • 2 large carrots, scraped, halved, and cut into batons.
  • 1/2 T. olive oil
  • salt and pepper, to taste

Instructions

  1. Toss the carrots with the olive oil, salt, and pepper. Pour into a grilling basket and place onto a grill heated to medium-high heat.
  2. Grill, stirring occasionally, until charred and cooked to desired tenderness.

  1. I have a pan with holes just like that! I can't wait to pop carrots on the grill next time we fire up the charcoal barbecue. They look so good with the little charredy bits.

  2. I don't have a grill anymore, but if I did, I'd try this out. Hmmm, and now that I think on it, I do have a spaetzle maker and I bet I can do this in the air fryer.

  3. Grilling always brings out the best flavors in veggies, especially carrots. I bet everyone eats their veggies when these are on the plate.
