 A popular dish throughout Mauritius, this noodle stir-fry is quick, easy, and delicious.  Perfect for a Wok Wednesday, especially when you are traveling to Mauritius as you Eat the World......

Mine Frite

Each month, a few of us take a virtual trip to countries throughout the world.  We explore those countries and their culture through food.  This month, we traveled to Mauritius.

Mauritius is an Island Country located in the Indian Ocean, near Madagascar in Southeastern Africa.  It has a diverse population, with roots in Europe, Africa, India, and China. The majority of the population is Indo-Mauritian, as is my son-in-law, Devin.

Mauritius has a strong middle-class economy with Hinduism being the largest religion practiced, followed by Catholicism and Islam.  English is the national language; however, locals speak Mauritian Creole, a French-based language.

The food is heavily influenced by Indian, Chinese, and Creole cultures.  This Noodle Stir-Fry is a great example of a popular dish.  My son-in-law is Hindu, thus he primarily eats a vegetable-based diet that includes some lamb, chicken, and fish, like this Lamb Biryani, Fish Curry, and Chicken Daube.

Mine Frite comes from the Hakka word for Noodles, and Frite comes from the French Frire, which means To Fry.  I chose to add Chicken to my Fried Noodles.  You can add any protein that you like or make it vegetarian.  The recipe is the same.

Mine Frite (Mauritian Fried Noodles)

A popular dish throughout Mauritius, this noodle stir-fry is quick, easy, and delicious.

Ingredients

  • 8 oz. cooked spaghetti pasta
  • 3 eggs
  • 2 T. olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 1/2 c. shredded cabbage
  • 1 c. shredded carrots
  • 5 T. soy sauce
  • 1 T. Chinese Rice Wine
  • 3 scallions, white and light green parts, sliced
  • salt and pepper, to taste

Instructions

  1. Place a teaspoon of the oil into a wok over medium-high heat. Add the eggs, season with salt and pepper, and cook, stirring, just until set. Remove to a plate and set aside.
  2. Add the remaining oil to the pan. When hot, add the chicken, season with salt and pepper, and cook, stirring until no longer pink
  3. Add the cabbage and carrots to the chicken and stir-fry for another minute.
  4. Whisk the soy sauce with the wine and add to the wok. Add the noodles, toss to mix in, and coat with the sauce.
  5. Stir in the scallions and reserved eggs, toss to warm through, and serve.
