I love making, serving, and eating pork tenderloin.  It always turns out so tender and flavorful.  It cooks quickly, making it perfect for entertaining, and it marries well with so many flavors and ingredients that meal planning is a snap.

When I was contacted by Ashley, I jumped at the opportunity to share some new Adagio Fall Products with my readers.  I explained to Ashley that I was leaving for Italy soon, but would be happy to blog and share the information when I returned home in October.  

Then, to my surprise, the package arrived within a couple of days.  Our daughter Nicole and her husband, Pierre, were working a craft fair in the neighboring town, and we invited them to join us for dinner when they closed up for the night.

I had bought a pork tenderloin to put on the grill for dinner.  When the package arrived and I opened the black tea, one whiff told me that it would make a great rub for that tenderloin.

I took a Tablespoon of the tea and ran it through my spice grinder until smooth.  I added that and a little salt to some olive oil, making a paste-like consistency that I rubbed all over the tenderloin.  The flavor was amazing.  A perfect Fall Entree.

Adagio  carries many fine tea blends, but you can also find small batch spice blends from their off-springs Selefina, varietal raw honeys from Bees, and gourmet coffees from Lardera.  I am anxious to get cooking with the other products I received, but that will have to wait until I return from Italy. Pumpkin Spiced Tea-Rubbed Pork Tenderloin

Pork Tenderloin, rubbed in a flavorful Pumpkin-Spiced Black Tea and grilled to a perfect medium.

Ingredients

  • 1 T. Adagio Pumpkin Spice Black Tea (loose)
  • 2 T. olive oil
  • salt to taste
  • 2 pork tenderloin, trimmed, silver skin removed

Instructions

  1. Place the tea into a spice grinder or small food processor and pulse until powdery.
  2. Pour into a small bowl with the olive oil, season with salt and mix until combined with a paste-like consistency
  3. Rub the pork tenderloins all over with the spiced tea rub. Let rest until brought to room temperature.
  4. Cook on a med-hot grill until an internal temperature of 165* is reached, about 15 minutes. Let rest for 5 minutes before slicing and serving.
