Yesterday, I shared a recipe for this tangy, delicious Fresh Herb Dressing. I was serving up a Vegetable Pot au Feu for dinner and decided to use the remaining dressing to make some savory muffins. They were a beautiful side to the Vegetable Stew.
The recipe for the dressing makes approximately one cup of dressing. This gave me enough to dress two Main Dish Salads and have leftovers for these delicious muffins. Of course, you can always double the other ingredients and use the entire amount of dressing for a larger batch of 12 muffins.

Parmesan Herb Muffins
These savory muffins make the perfect accompaniment to soup or salad. Filled with herbs and parmesan cheese, each bite is tangy, earthy, and satisfying.

Ingredients
- 1 c. flour
- 1 t. baking powder
- pinch of salt
- 1/4 t. baking sod
- 1/2 c. finely grated Parmesan cheese
- 1/4 c. olive oil
- 1 egg
- 1/2 c. Fresh Herb Dressing (recipe here)
Instructions
- Sift together the flour, baking powder, salt, baking soda, and Parmesan cheese in a large bowl. Make a well in the center and set aside.
- Whisk together the egg, olive oil, and herb dressing. Pour into the well of dry ingredients and mix just until combined.
- Dough will be quite thick. Divide between 6 muffin tins and bake in a preheated 350* oven for 15-20 minutes, until a skewer inserted removes cleanly.
