Beer Pretzel Nuggets #SundayFunday

These pretzel nuggets made with a full can of beer and white whole wheat flour are a fun, little, pop in the mouth treat.  I served them up with some Honey Mustard for dipping.

My brother, Dick, and his wife, Jackie were coming over to play in the pool and join us for dinner one night so when I got up in the morning I put together the dough for these pretzels and set it aside to rise as I went about my day.

About an hour before they were to arrive I punched down the dough, formed it into nuggets and gave them a baking soda bath.

A quick bake in the oven and they were ready to be placed in a serving platter and placed out on the deck when they arrived.  It was a wonderful little appetizer to nibble while enjoying the pool before dinner.

I'm anxious to see what everyone else is cooking up with beer today.......

Whole Wheat Beer Pretzel Nuggets

These pretzel nuggets made with a full can of beer and white whole wheat flour are a fun, little, pop in the mouth treat. I served them up with some Honey Mustard for dipping.

Ingredients

  • 1 can or bottle of beer
  • 2 1/4 t. active dry yeast
  • 2 T. butter, melted
  • 2 T. sugar
  • 1 1/2 t. salt
  • 4 1/2 c. white whole wheat flour
  • 10 c. water
  • 2/3 c. baking soda
  • 1 egg yolk
  • 1 T. water
  • Kosher salt for sprinkling

Instructions

  1. Warm the beer in a saucepan over med high heat or in the microwave to 110-115*.  Pour into the bowl of a stand mixer fitted with the dough hook.  Stir in the yeast until dissolved.  Add the butter, sugar, salt.  Lower the dough hook and turn mixer to low speed.  Stir in 3 cups of the flour.  Increase to medium and mix until smooth.  
  2. Return mixer to low speed and add additional flour, 1/4 cup at a time until a smooth ball is formed and the dough no longer sticks to the bowl.  
  3. Increase speed and knead the dough for about 5 minutes, until smooth and elastic.  Remove dough ball from bowl, treat bowl with an olive oil spray, return dough ball, turning to cover with the oil.  Cover lightly with some plastic wrap and let rest until doubled in size, about an hour or until you are ready to continue with the recipe.
  4. Punch down the dough and divide into 8 equal pieces.  Roll each piece into a 12" rope and then cut each rope into 12, 1" pieces.
  5. Place the water and baking soda into a large deep pot or dutch oven over high heat.  Bring to a boil, stirring to dissolve baking soda.  Drop the nuggets, in batches, into the water and cook for 30 seconds.  Remove to a paper towel lined baking pan to drain completely.
  6. Place the dried nuggets onto baking pans that have been treated with baking spray. 
  7. Whisk toghether the egg yolk and water.  Using a pastry brush, coat each nugget with the yolk mixture and sprinkle with kosher salt.
  8. Bake in a preheated 425* oven for 8-10 minutes, until golden brown.  Remove to a wire rack to cool slightly.  Can be served warm or at room temperature.
