Turkey and Cranberry Pannini #FoodnFlix

Every year we have a rotation of Christmas Movies that we watch.  The main three are: my personal favorite, It's a Wonderful Life; Frank's favorite, White Christmas; and we both love the original Miracle on 34th Street.

There are other Holiday movies that we watch as well but these are the main three that are considered "must watch" in our household.

This past weekend we started with White Christmas.

 I have seen this movie at least 40 times.  I love the singing and the dancing.  I love the camaraderie of WWII soldiers coming together after DDay to support one of their own.  I love the hokey love story and the friendship and bonds that are shared.

But until this year, I have never watched this movie with Foodie Glasses on.  In fact, when Heather of All Roads Lead to the Kitchen, announced that our December Food n Flix selection could by any one of our favorite Holiday Movies, I realized that I had never watched any of these 3 movies while paying attention to the food served.

There was a reason I couldn't remember any food in White Christmas.  There is very little shown.  You do see people eating in restaurants but you are unable to see what they have on their plates.  I think there was a shot of a Seafood Buffet in one of the Supper Clubs.  There was coffee and cocktails a plenty.  And, once they landed at the Inn in Vermont, there were sandwiches mentioned numerous times and also shots of soup being served.



This suited me just fine and dandy because we had just come off of Thanksgiving and I made soup and sandwiches with the leftovers.  In fact, as providence would have it, Bing Crosby mentioned a Turkey Sandwich when explaining how food can affect your dreams.

I had made up a pot of Turkey Frame Soup.  This is as much a yearly tradition as having Turkey on Thanksgiving and watching Christmas Movies.


So all I needed to do come suppertime was to put together the sandwiches and grill them up.  A fresh loaf of artisan bread cut into slices.  A layer of cranberry sauce, a pile of turkey, a slice of cheese, more cranberry sauce, butter on the outside and onto a hot grill pan with a cast iron pan used as a weight.


 A perfectly grilled sandwich with crunchy outside and layers of sweet and savory inside.  They would have been a huge hit at the Inn.

Yield: 1 sandwich

A fresh loaf of artisan bread cut into slices. A layer of cranberry sauce, a pile of turkey, a slice of cheese, more cranberry sauce, butter on the outside and onto a hot grill pan. Leftovers have never tasted so good!!

ingredients:

  • 2 slices, crusty, white bread
  • 2-3 T. cranberry sauce
  • 4 oz. sliced turkey breast
  • 1 slice Havarti cheese
  • 1 T. butter

instructions:

How to cook Turkey and Cranberry Pannini

  1. Butter both slices of bread on the outside.  Spread half of the cranberry sauce onto the inside (non buttered) of one of the slices.  Add the turkey breast on top of the cranberry sauce and top with the cheese.  Spread the remaining cranberry sauce over the top and place the second slice of bread, buttered side showing, onto the sandwich. 
  2. Heat a grill pan over med high heat.  Place the sandwich onto the grill pan and place a cast iron skillet on top to weigh the sandwich down onto the grill pan.  Let cook for about 5 minutes until golden brown with nice grill marks.  Flip the sandwich over and repeat cooking for another 3-4 minutes.

  1. I can honestly say that I'm not sure I've seen "White Christmas." But I will fix that this month! I remember watching "It's a Wonderful Life" every year with my grandparents. That and "Sound of Music" which isn't a holiday movie, per se. But it seemed to be on every time I went to visit. Thanks for the nudge.

  3. A "newish" tradition on The Hubs side is a similar leftover sandwich with turkey (of course) on croissants with cream cheese, avocado and cranberry sauce. Good stuff, but I want to offer up your version as an alternate next year.
