Amish Breakfast Casserole #FantasticalFoodFight

This filling and delicious casserole chock full of bacon, cheese, potatoes and eggs can be made the night before and placed into the oven before your guests arrive for brunch the next day.

Frank was scheduled to conduct a CPL class on the Saturday before this Fight took place.  Perfect timing for me to try out a recipe from the Taste of Home, Recipes Across America, Cookbook that I got as a door prize at a baby shower recently.


It turned out wonderful and I wasn't the only one who thought so.  When I went to clear the breakfast buffet there was nary a drop left.

This was a wonderful gift to receive at the shower and I couldn't wait to get home and thumb through it.  I am looking forward to making many more recipes from this book.  Taste of Home has yet to let me down with any of their recipes.

Amish Breakfast Casserole

This filling and delicious casserole chock full of bacon, cheese, potatoes and eggs can be made the night before and placed into the oven before your guests arrive for brunch the next day.

ingredients:

  • 1 lb. thick cut, apple smoked bacon, diced
  • 1 medium,  sweet onion, diced
  • 6 eggs
  • 4 c. frozen hash brown potatoes, thawed
  • 2 c. shredded colby jack cheese
  • 1 1/2 c. (4%)  cottage cheese
  • 1 c. shredded swiss cheese
  • salt and pepper, to taste

instructions:

How to cook Amish Breakfast Casserole

  1. In a skillet over medium high heat cook the bacon and onion until bacon is crisp and onion is translucent.  Set aside on a paper towel lined plate to drain.
  2. Place the eggs in a bowl and lightly whisk them.  Add the potatoes and all the  cheeses.  Season with pepper and salt if desired.  I went easy on the salt due to the saltiness of the bacon.  Stir to combine, then mix in the bacon and onions.
  3. Turn the mixture into a 9x13" casserole that has been treated with baking spray. 
  4. At this point the casserole can be refrigerated for up to 24 hrs.  When ready to bake place into a preheated 350* oven for 30-35 minutes, until golden brown and bubbly.

  1. Yummmm - I am loving all these breakfast casserole ideas! Especially when you can make them up ahead of time - cheese and convenience, can't beat 'em. :)
