Easiest Almond Brittle in the World #FantasticalFoodFight

This easy peasy almond brittle is cooked up in the microwave in less than 10 minutes and ready to be broken and packaged for giving in less than an hour.

It doesn't get any easier than this folks..........

And that's a good thing because otherwise I wouldn't have been able to join the fun in this month Fantastical Food Fight.

Fantastical Food Fight is hosted and held each month by Sarah of Fantastical sharing of Recipes.  You can learn how to join in the fun here.

This month I didn't read the rules completely and almost wasn't able to join.  You see I had intended to share these Milky Way Thumbprint cookies.  I was thinking that candy could be used as an ingredient but a closer look at the rules to this particular event stated that we must make a candy of some sort.

Being such a busy month with the Holidays, I thought I was going to have to sit this one out.  Then I was thumbing through one of my Christmas Cookbooks, Pillsbury's Family Christmas, and found a recipe for Microwave Cashew Crunch.

I didn't have any Cashews but I did have some Almonds and everything else called for in the recipe.  In less than an hour the recipe was made, photographed and this post was written.  YAY!!!

Each year when I pack away my Christmas decorations, I also pack away my Christmas Cookbooks.  It is so much fun to unbox them each year and browse through them while watching Hallmark Christmas movies.  It seems like each year I find a new recipe or craft to make.

I have been cooking from this particular Christmas Cookbook since 1991.  I have recipes that I return to each year and new recipes that strike my fancy, like this one I'm sharing today.  I might just win this month's Fantastical Food Fight since this recipe is a knock out.

Let's take a look at the competition.......

I am also linking up with Foodies Read.  Stop by and see what others are being inspired to make this month.

  4. Love that you don't need a candy thermometer! My sister is a huge almond fan, going to have to make her some of this.

  6. I have to try this method over the stovetop until I get a better thermometer. And almonds instead of peanuts sounds brilliant!

    1. You are probably healthier without it Cam. Mine usually only gets used for reheating.

  8. I adore brittle! I have a microwave brittle recipe I've been using for nearly 10 years now and giving as gifts each year for Christmas time. Yours looks wonderful - so fun to mix and match the add-ins to make it "yours"!

  9. I do love brittle and yours sounds so yummy and easy. Unfortunately, I was into brittle making last Christmas (Mac nut) and lost a tooth eating it.:( Though, it was probably on its way out anyway. I tell myself.

    2. Can you do this without the baking soda?

    3. I have never tried it but I have seen recipes without it. The soda aerates the brittle making it less hard.
