This month I didn't read the rules completely and almost wasn't able to join. You see I had intended to share these Milky Way Thumbprint cookies. I was thinking that candy could be used as an ingredient but a closer look at the rules to this particular event stated that we must make a candy of some sort.
Being such a busy month with the Holidays, I thought I was going to have to sit this one out. Then I was thumbing through one of my Christmas Cookbooks, Pillsbury's Family Christmas, and found a recipe for Microwave Cashew Crunch.
I didn't have any Cashews but I did have some Almonds and everything else called for in the recipe. In less than an hour the recipe was made, photographed and this post was written. YAY!!!
Each year when I pack away my Christmas decorations, I also pack away my Christmas Cookbooks. It is so much fun to unbox them each year and browse through them while watching Hallmark Christmas movies. It seems like each year I find a new recipe or craft to make.
I have been cooking from this particular Christmas Cookbook since 1991. I have recipes that I return to each year and new recipes that strike my fancy, like this one I'm sharing today. I might just win this month's Fantastical Food Fight since this recipe is a knock out.

Easiest Almond Brittle in the World
This easy peasy almond brittle is cooked up in the microwave in less than 10 minutes and ready to be broken and packaged for giving in less than an hour.
prep time: 5 minscook time: 10 minstotal time: 15 mins
1 c. sugar
1/2 c. light corn syrup
1 c. almonds (or nuts of choice)
1 t. butter
1 t. vanilla
1 t. baking soda
Place the sugar and corn syrup in an 8 cup, microwave safe measuring cup. Microwave on high for 4 minutes.
Remove from microwave and stir in the almonds (or nuts of choice). Return to the microwave for 3 minutes on high.
Stir in the butter and vanilla and microwave on high for 1 more minute.
Stir in the baking soda and immediately pour the mixture onto a baking sheet lined with parchment or a silicone mat. Spread out to cool with a wooden spoon. After 30 minutes, break the brittle into pieces and serve or package as gifts.
