Hey, I'm a Day Early....Does that mean I'm a Dollar Long? (Weekly Menu)

This taco soup is quick, easy and delicious.  Perfect for a weekday meal during this very busy time of year.


I served this up last week for Taco Tuesday which also happened to be the first day of school here in Michigan.

I had pulled this recipe for Marissa to make.  You may recall that she has been in charge of one meal a week since she moved in.  However, school has now started.  Cheer practice is right after school and last until 5 pm.  She comes home starving.  I think we will set aside her meal nights until after football season.

It would have been a perfect recipe for her to make since it is easy as can be and is ready in half an hour but I know how it feels to walk in from a long day and being faced with the prospect of having to get dinner on the table.  She has her entire adult life to deal with that....I"m certainly not expecting her to deal with it now.

I adapted this recipe from one posted by my friend Paula, The Saucy Southerner.  It doesn't really resemble her original recipe too much at all but it was my inspiration.  Paula made this for Frugal Friday which is another bonus of this recipe that I didn't mention. 

I am going to share the recipe with you but first I'm posting the Weekly Menu a little early this week.  I normally post on Friday or Saturday but life is happening and today I had a free moment to plan and post my menu so there you have it.

Sunday we are going to the Renaissance Festival.  A group of us get dressed up each year and join up at the Festival for fun and frivolity.  This is Marissa's first visit.  I hope she enjoys it.

Other than that it is just more of our new normal now that we have a teenager in the house.  This mostly means that I will be wearing my taxi driver hat LOL.

Taco Soup

prep time: cook time: 30 minstotal time: 30 mins
This taco soup is quick, easy and delicious. Perfect for a weekday meal during this very busy time of year.

ingredients:

1 lb. ground beef
salt and pepper, to taste
2 cloves garlic, minced
1 small onion, diced
2 (14 oz) can fire roasted diced tomatoes with juices
1 (4 oz) can green chiles
1 (15 oz) can pinto beans, rinsed and drained
Kernels from 2 lg. ears of corn
3 T. taco seasoning
1 (14 oz) can of water
Grated Colby Jack Cheese for topping, if desired
Sour cream , if desired
Corn Chips, if desired

instructions:

Place the meat, onions and garlic in a soup pot over med high heat.  Season with salt and pepper and cook until crumbled and browned about 10 minutes.  Drain any fat from the pan.

Stir in the taco seasoning mix.   Add the tomatoes, beans, chiles , corn and water.  Bring to a boil, reduce heat to low, cover and simmer for about 20 minutes.

Serve with grated cheese, sour cream and corn chips instead of crackers.

    You remind me that I need a recipe for taco soup for when the weather changes. At the moment we are traveling in a big heat wave so all I want is cooling food!
