Apple Fennel and Beet Salad #AppleWeek

I almost wasn't going to post for this event today.  It wasn't originally a day scheduled for Apple Week but then we received so many wonderful gifts from out generous sponsors that our leader, Carlee of Cooking with Carlee, decided to extend the event by another day.

This delicious salad was a huge hit when I served it up at a family dinner, so I earmarked it to share with you and placed it in my archives.  Then Fall turned into Winter and the Holidays happened.  Then Spring sprung and there were berry and asparagus and lamb recipes to share.  Then it was Summer and I got busy sharing recipes for potlucks and picnics and grilling.

Now we are back to Fall when apples are abundant and beets are freshly plucked from the ground.  It was a perfect opportunity to share this salad.  You are going to want to put it in your archives because this makes a perfect side dish on Thanksgiving.

Apple Fennel and Beet Salad

All the wonderful flavors of Fall tossed together in a salad that makes a perfect side dish for your favorite roast pork, turkey or chicken recipe.


4 beets, peeled and cut into moons 1/4" thick
4 T. olive oil, divided
salt and pepper to taste
juice and zest of 1 lemon
1 T. Dijon Mustard
2 t. honey
1 fennel bulb, trimmed, cored and thinly sliced, some fronds reserved
1 apple, cored and thinly sliced
1/2 c. crumbled goat cheese
1/2 c. crumbled toasted walnuts


Toss the beets with 2 Tablespoons of olive oil.  Season with salt and pepper.  Spread onto a baking sheet and place in a 425* oven for 20-25 minutes, until easily pierced with a fork.

Whisk together the remaining 2 Tablespoons of olive oil with the lemon juice, honey and mustard.  Season to taste with salt and pepper.

Toss the apple slices, fennel slices and lemon zest with the vinaigrette.  Add the beets and toss slightly before spreading onto a platter.  Sprinkle with the goat cheese, walnuts and fennel fronds.
