Baked Apple Pancake #AppleWeek

I am anxious to share this recipe with you today.  I received a wonderful box of Envy Apples that I used in the creation of today's Baked Apple Pancakes.  Have you ever tried Envy Apples?  They are crisp and delicious with just the right touch of sweetness.

I started out by coring, peeling and slicing those tasty Envy Apples into 1/4" slices.  I scattered them into a buttered baking pan and let them bake until they started to soften slightly and the butter was browned and bubbly.


Carefully remove the baking pan from the oven, it is going to be steaming hot.  Immediately pour your eggy pancake batter over the apples.  Sprinkle with some brown sugar and place back in the oven for another 20 minutes.


It bakes up to a puffed, golden mass of deliciousness.  It makes a wonderful presentation and the smell!  Your mouth will be watering, for sure.


You can sprinkle it with some powdered sugar, if desired.  It makes 6 regular servings or 4 very generous servings.  In case you are feeling very hungry.


Your family is going to love this breakfast!  Serve it up with a side of sausage, some juice and some coffee and it will give you enough energy to go out and enjoy the season.  How about a hike, or the cider mill or apple picking?  What is your favorite Fall activity?

Baked Apple Pancake

Tender, delicious apples covered in a crepe like batter and baked to a puffy, golden perfection. This is the perfect start to a crisp fall weekend.
prep time: 15 minscook time: 35 minstotal time: 50 mins

ingredients:

1 c. milk
4 eggs
3 T. sugar
1 t. vanilla
pinch of salt
1/4 t. cinnamon
2/3 c. flour
1/4 c. butter
2 apples, peeled, cored and cut into 1/4" slices
3 T. brown sugar, packed
Powdered sugar for sprinkling, if desired

instructions

Place the milk, egg, sugar, vanilla, salt and cinnamon in a blender and run until well blended.  Set aside.

Melt the butter and pour into the bottom of a 9x13" glass baking pan.  Scatter the apples over the melted butter and place into a preheated 425* oven until apples start to soften and the butter is browned and bubbly, about 10 minutes.

Remove pan from oven and pour the batter over the softened apples.  Sprinkle the batter with the brown sugar.  Return to the oven and bake for another 20 minutes, until pancake is puffed and golden brown.

Sprinkle with powdered sugar, if desired, and serve while still warm.
