Movie and Dinner

We went out with friends tonight to go see Taken 3.  For those of you that have seen the sequels, it is nearly as good as 1 and better than 2.  If you are an action movie fan, then you should absolutely go see this.  I just like it because Liam Niesen is a bad ass and he is in my age group.  I thought that sounded better than saying he is old LOL.


After the movie, as we were driving home, we got a flat tire.  Poor Frank had to go out into the frigid cold, blustery weather and change the tire as we all sat inside the warm car saying how sorry we felt for him and laughing at his predicament.  We are evil, nasty people.....well, okay we are just normal people who were happy we had Frank to change the tire so we didn't have to.

When we got home, we had cocktails and threw together a quick dinner that included Pasta with Lemon and Basil, inspired by Betty Crocker's Easy Entertaining Cookbook.


Linda had brought a gorgeous salad and I threw together a quick lemon juice and olive oil vinaigrette for it.  The entire dinner took about 15 minutes to get on the the table.  We had the salad, pasta, shrimp scampi and steamed asparagus in less time than it would have taken to order in a pizza...and it was delicious!!



Pasta with Lemon and Basil
adapted from Betty Crocker's Easy Entertaining

6 oz. angel hair pasta, cooked per package directions
1/4 c. chopped fresh basil
juice and zest of 1 large lemon
3 T. olive oil
salt and pepper to taste
Grated parmesan cheese

Toss all ingredients together in a large bowl.  Serve immediately.  Print Recipe
